Description

This hunter's chicken is a comforting and flavorful dish, perfect for a family meal or a special occasion. The combination of juicy chicken, earthy mushrooms, salty olives, and a touch of brandy makes it an unforgettable culinary experience. I have been preparing it for years and it is always a success. The preparation is simple thanks to the Thermomix®, which helps us to sauté and cook the ingredients to perfection. Ingredients (14 ingredients)

  • 4 piece chicken thighs
  • 250 grs. chicken thigh
  • 1 piece lemon (the juice)
  • 100 grs. bacon cut into slices
  • 2 clove garlic
  • 1 hoja bay leaf
  • 0.5 cup chicken broth
  • 75 grs. pitted green olives
  • 200 grs. mushrooms
  • 200 grs. crushed natural tomatoes
  • 0.5 cup brandy
  • 1 pinch salt
  • 1 pinch white pepper
  • 1 cucharadita sugar

Preparation (10 steps)

Chicken preparation

Clean and wash the 4 chicken thighs (of 250 grs. each approx.). Dry them and sprinkle with half the juice of a lemon. Season with salt and pepper to taste and let stand outside the refrigerator, in a cool, poorly ventilated place.

Bacon chopping and initial frying

Cut the 100 grs. of bacon into not too thin slices. Place the bacon in the Thermomix bowl and program 5 Min./120°C/Stufe 1 to brown it. Remove the bacon from the bowl and reserve.

Sautéing the chicken with garlic and bay leaf

Thermomix® Setting
10 min/Varoma/Speed 1 Varoma

Without washing the bowl, add the chicken thighs to the Thermomix bowl and program 10 Min./Varoma/Stufe 1 to brown them on all sides. Add 2 crushed garlic cloves and 1 bay leaf. Pour in 1/2 cup of chicken broth.

Chicken cooking

Program 30 Min./100°C/Stufe 1. Place the basket on the lid to avoid splashes.

Preparation of mushrooms and olives

Meanwhile, blanch the 75 grs. of pitted green olives by briefly passing them through boiling water. Clean the 200 grs. of mushrooms and rinse them in water acidified with the rest of the lemon juice. Dry both well.

Add mushrooms, olives and tomato

Add the mushrooms, olives and 200 grs. of crushed natural tomatoes to the Thermomix bowl.

Season and adjust acidity

Season with salt and pepper to taste and add 1 teaspoon of sugar to counteract the acidity of the tomato.

Final cooking

Program 20 Min./100°C/Stufe 1. Place the basket on the lid to avoid splashes.

Flambé with brandy

Remove the chicken from the bowl. Sprinkle the chicken with 1/2 cup of brandy and carefully flambé until the flame goes out by itself.

Serve

Serve the chicken with mushrooms and olives as a garnish.
