Description

This chicken parmesan is a reinterpretation of the classic Italian dish, made even simpler and faster thanks to our trusted Thermomix®. The sliced ​​chicken breast, breaded and cooked, are then enriched with a fresh tomato and basil sauce, stringy mozzarella and grated parmesan. Perfect for a family dinner or a Sunday lunch, this dish is a true comfort food that everyone will love. Preparation is surprisingly quick, ideal when you have little time but don't want to give up on taste. An explosion of Mediterranean flavors in every bite!

Ingredients (11 ingredients)

  • 400 g sliced chicken breast
  • 2 piece eggs
  • 200 g tomato purée
  • 100 g shredded pizza mozzarella
  • 20 g grated parmesan
  • flour
  • breadcrumbs
  • basil
  • olive oil
  • pepper
  • fine salt

Preparation (7 steps)

Preparation of the chicken breast

Arrange the sliced chicken breast on a tray and sprinkle with fine salt and pepper. Leave to flavor for about 15 minutes.

Preparation of the breading

In a bowl, break the eggs, add a pinch of fine salt and pepper. Beat with a fork. Also prepare a plate with flour and one with breadcrumbs.

Breading the chicken

Dip each slice of chicken breast first in the flour, then in the beaten egg, and finally in the breadcrumbs, pressing well with your hands to make the breading stick.

Cooking the chicken (first part)

Place the breaded slices in the air fryer basket lined with baking paper. Add a drizzle of olive oil on the surface and cook at 180°C for 10 minutes, turning the meat halfway through cooking.

Preparation of the tomato sauce

Meanwhile, pour the tomato purée into the Mixtopf, add fine salt, a drizzle of olive oil and the roughly chopped basil leaves. Mix: 10 Sec./Stufe 3.

Adding the sauce and cheese

Remove the air fryer basket and add a few tablespoons of tomato sauce prepared in the Mixtopf to the chicken breast. Also add the shredded mozzarella and grated parmesan.

Final cooking

Put the basket back in the air fryer and cook again at 180°C for about 5 minutes, to melt the cheese.
