Description

This chicken meatloaf is a tasty and light alternative to the classic meat meatloaf. Prepared with chicken breast, creamy ricotta and a touch of lemon, it is perfect for a family lunch or an informal dinner. I prepare it often because it is easy to make and everyone likes it! Cooking in the air fryer makes it crispy on the outside and soft on the inside. Serve it with a side of fresh arugula for a complete and balanced meal. An extra idea? Try adding a pinch of nutmeg to the dough for an even richer flavor!

Ingredients (11 ingredients)

  • 300 g chicken breast
  • 250 g ricotta
  • 1 uova eggs
  • 1 limoni grated lemon zest
  • 60 g grated cheese
  • 25 g breadcrumbs
  • 50 g pitted green olives
  • 120 g sliced bacon
  • parsley
  • pepper
  • fine salt

Preparation (7 steps)

Chicken pieces in the bowl

Put 300 g of chicken breast cut into pieces in the bowl.

Adding the ingredients

Add 250 g of ricotta, 1 egg, 60 g of grated cheese, 25 g of breadcrumbs, the grated zest of 1 lemon and parsley to taste in the bowl.

Transfer to bowl and add olives

Transfer the mixture to a bowl and add 50 g of pitted green olives cut into rounds. Season with fine salt to taste and pepper to taste and mix well with a spoon.

Form the meatloaf

Transfer the mixture to a sheet of baking paper and use your hands to give it the typical cylindrical shape, using the baking paper if necessary.

Wrap with the bacon

Wrap the meatloaf with 120 g of sliced bacon, so as to create a tasty and crunchy outer layer.

Cooking in the air fryer

Place the meatloaf in the air fryer basket and cook at 170 °C for 25-30 minutes, turning it halfway through cooking.

Serve

Once cooked, let it cool slightly and then cut into slices. Serve the chicken meatloaf with a nice side of arugula or salad!
