Ingredients (8 ingredients)

  • 4 piece boneless chicken breast halves with skin
  • salt
  • freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh herbs (thyme, parsley, rosemary)
  • 0.25 cup apple cider vinegar
  • 4 tablespoons cold butter, cut into small pieces
  • 1 tablespoon chicken broth (or water)

Preparation (6 steps)

Prepare the Chicken

Season the 4 boneless chicken breast halves with skin with salt and freshly ground black pepper to taste. Ensure both sides are evenly seasoned for optimal flavor.

Heat Olive Oil

Add 2 tablespoons olive oil to a skillet. Heat the oil in the skillet for 3 Min./120°C/Stufe 1.

Sear Chicken Breasts

Place the seasoned chicken breasts skin-side down in the heated skillet. Sprinkle with 1 tablespoon chopped fresh herbs (thyme, parsley, rosemary). Cook until the bottoms are well seared and golden brown, approximately 5 to 6 minutes. This step is done outside of the Thermomix.

Continue Cooking Chicken

Flip the chicken breasts over and continue cooking until an instant-read thermometer inserted into the center of a breast reads 150 degrees F (66 degrees C), about 5 minutes. This step is done outside of the Thermomix.

Add Vinegar and Butter

Add ¼ cup apple cider vinegar and 4 tablespoons cold butter, cut into small pieces, to the pan with the chicken. Shake the pan gently until the butter melts and the internal temperature of the chicken reads at least 165 degrees F (74 degrees C), about 2 to 3 minutes more. This step is done outside of the Thermomix.

Thin the Sauce

If needed, stir in 1 tablespoon chicken broth (or water) to thin the sauce. This step is done outside of the Thermomix.
