Description

This South-West spiced scented roasted chicken is a dish that I often prepare when I want something tasty and easy to make. The mix of spices, with a touch of chili pepper, cumin, and coriander, makes the chicken truly special. Marinating for at least an hour is essential for the flavors to penetrate well. The potatoes, cooked together with the chicken, absorb all the juices and become delicious. Perfect for a family dinner or with friends, this chicken is always a success! Preparation is quick and easy, but the result is a dish rich in flavor and aroma.

Ingredients (13 ingredients)

  • 4 persone Doses
  • 1 piece Chicken
  • 4 clove Garlic
  • 1 piece Lemon
  • 1 tsp Chili powder
  • 1 tsp Paprika
  • 0.5 tsp Cayenne pepper
  • 1 tsp Cumin
  • 1 tsp Coriander powder
  • 1 tsp Garlic powder
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 500 g Potatoes

Preparation of the spice mix

Pour the Sichuan pepper and coriander seeds into the bowl. Pulverize for 20 Sec./Stufe 10. Add the chili powder, paprika, cayenne pepper, cumin, coriander powder, garlic powder, salt and black pepper. Mix for 10 Sec./Stufe 3.

Chicken preparation

Prepare the chicken by removing the tip of the wings, the tail and flaming it to remove any residual fluff. Spread the chicken well and crush the rib cage a little. Transfer it to a baking dish and grease it on the surface.

Flavoring the chicken

Separate the skin from the pulp and pour the oil between the skin and the pulp. Massage the South-West spice mix well all over the chicken and between the skin and the pulp. Divide the lemon into wedges and use them to collect the spices remaining in the baking dish and insert them into the chicken. Divide a head of garlic in half and insert it inside the chicken. Cover with plastic wrap and leave to flavor for a minimum of one hour.

Potato preparation

Prepare a baking tray where you will distribute the potatoes cut into chunks, leaving the smaller ones whole. Add the chicken and season with oil, salt the potatoes adequately above all.

Baking in the oven

Bake at 190°C for about an hour. At the end of cooking, serve the chicken drizzling it with the cooking juices.
