Description

This roast chicken stuffed with chickpeas is true comfort food! I often prepare it for Sunday lunch, and every time it's a success. The chickpea stuffing, flavored with lemon and thyme, makes the chicken particularly tasty and succulent. The preparation is simple, but the result is a flavorful dish, perfect for a family dinner or with friends. The touch of thyme-flavored butter makes the skin crispy and golden. A true pleasure for the palate!

Ingredients (9 ingredients)

  • 1.5 kg Whole chicken
  • 400 g Already cooked chickpeas
  • 3 tbsp Extra virgin olive oil
  • 1 piece Lemon (zest and juice)
  • 1 piece Whole lemon
  • 50 g Butter
  • 5 foglia Fresh thyme
  • Salt
  • Black pepper

Preparation (7 steps)

Preparation of chickpea stuffing

Pour 400g of already cooked chickpeas into a bowl. Add 3 tablespoons of extra virgin olive oil, salt to taste, a generous grind of black pepper, grated zest and juice of 1 lemon. Mix well to blend all the flavors.

Chicken stuffing

Take a whole chicken (about 1.5 kg) and stuff it with the prepared chickpea mixture. Close the opening of the chicken with a whole lemon.

Preparation of flavored butter

Thermomix® Setting
3 min/122°F/Speed 2 50

Put 50g of butter in the Mixtopf and add 5 fresh thyme leaves. Melt the butter: 3 Min./50°C/Stufe 2.

Chicken seasoning

Gently lift the chicken skin from the underlying pulp and, being careful not to break it, season the under-skin with the melted flavored butter. Spread the surface of the chicken with the remaining butter.

Preparation for baking

Transfer the chicken to a grill placed inside a baking sheet. Salt and pepper the surface of the chicken well. Make sure the opening of the chicken is well closed with a skewer.

Baking

Bake at 190-200°C in a static oven for about 75 minutes; if in the last 5 minutes of cooking you notice that the chicken has not browned well, turn on the grill and finish cooking.

Cutting and serving

Once cooked, cut the chicken into pieces, keeping the filling aside. Serve the chicken accompanied by the chickpea stuffing.
