Description

This roast chicken with fresh herbs is a simple but flavorful dish, perfect for a family meal or special occasion. Tarragon brings a unique aromatic touch that goes wonderfully with poultry. Slow cooking in the oven guarantees tender and juicy meat, while confit garlic delicately perfumes the whole thing. I have been preparing this dish for years and it is always a hit. Feel free to add other herbs from Provence to vary the flavors. A real delight, especially served with roast potatoes or a seasonal vegetable puree!

Ingredients (6 ingredients)

  • 1 piece Chicken
  • 1 bouquet Tarragon
  • Sweet butter
  • Olive oil
  • 6 clove Garlic
  • Coarse salt

Preparation (5 steps)

Preheat the oven

Preheat the oven to 140°C in circulating heat. This step is crucial for even cooking of the chicken.

Prepare the casserole dish

Place a generous drizzle of olive oil in the bottom of the casserole dish. This step is done outside of the Thermomix.

Prepare the chicken

Remove the strings around the chicken and “relax” it, “open” it a little. Place half of the bunch of tarragon in the bottom of the casserole dish, spread well. Salt the chest of the chicken generously, then add the other half of the tarragon inside. This step is done outside of the Thermomix.

Season and arrange the chicken

Place the chicken on its back in the casserole dish. Add a few pieces of butter: one in the chest and massage the chicken all over with the rest. Add a little more olive oil on top of everything. Salt the surface of the chicken, the supremes, the thighs. Distribute the whole garlic cloves, in their shirts, all around the chicken. This step is done outside of the Thermomix.

Cooking the chicken

Cook for 3 hours. After 1 hour, turn the chicken over onto its belly. 45 minutes later, turn the chicken again, onto the left thigh. 45 minutes later, turn it onto the right thigh. This step is done outside of the Thermomix.
