Description

This herb scented roast chicken is a classic of Italian cuisine, revisited to be prepared with the help of our trusted Thermomix®. The meat is tender and juicy, flavored with a mixture of fresh aromatic herbs and the scent of lemon. The potatoes, cooked directly in the pan together with the chicken, absorb all the flavors of the dressing, becoming a delicious side dish. Perfect for a Sunday lunch with family or a dinner with friends, this dish is a real comfort food that warms the heart. I often prepare it, especially in autumn, when the aromatic herbs in my garden are at the peak of their scent.

Ingredients (10 ingredients)

  • 1 piece Chicken
  • 2 clove Garlic
  • 1 piece Lemon
  • 1 bunch Rosemary
  • 1 bunch Sage
  • 1 bunch Thyme
  • 1 pinch Salt
  • 1 pinch Pepper
  • 4 tbsp Extra virgin olive oil
  • 1 kg Potatoes

Preparation of the herb mixture

Put 1 bunch of sage, 1 bunch of thyme and 1 bunch of rosemary in the bowl. Chop for 5 Sec./Speed 7. Transfer the mixture to a bowl and add 2 tablespoons of extra virgin olive oil. Mix well.

Stuffing the chicken

With the help of a teaspoon, gently lift the chicken skin and spread the prepared herb mixture under the skin. Cut 1 lemon into slices and place them inside the chicken. Season the inside of the chicken with a little rosemary, sage, 1 clove of garlic in its skin, salt and pepper. Tie the chicken with kitchen string.

Preparation of the potatoes

Peel 1 kg of potatoes and cut them into rather large pieces. Place them in a baking tray lightly greased with extra virgin olive oil and arrange them around the chicken. Season with rosemary, salt, pepper and 1 clove of garlic in its skin. Season everything with a generous drizzle of oil.

Baking in the oven

Transfer the pan to the preheated oven at 180°C ventilated for about 60 minutes. During cooking, baste the chicken with the cooking juices every 15-20 minutes. Check the cooking of the potatoes and, if they darken too much, cover them with aluminum foil about 15 minutes before the end of cooking. If necessary, finish cooking using the grill for 2-3 minutes at 220°C.
