Description

This chicken dish with bacon, peppers and melted cheese is an explosion of flavour that will transport you directly to Mexico. Ideal for a quick weeknight dinner or to surprise your friends at an informal gathering. The combination of juicy chicken, crispy bacon, sweet peppers and melted cheese is simply irresistible. I prepare it often because it is very easy to make and always triumphs. You can serve it in homemade tacos, burritos or simply accompanied by white rice. A versatile and delicious recipe that you cannot miss!

Ingredients (7 ingredients)

  • 349 g Chicken breast
  • 100 g Bacon
  • 1 piece Small yellow pepper
  • 1 piece Small red pepper
  • 1 piece Small green pepper
  • 1 piece Purple onion
  • Mozzarella or melting cheese

Preparation (5 steps)

Prepare the bacon

Thermomix® Setting
5 min/248°F/Giro a la izquierda/Velocidad 1 120 Reverse

Cut 100 g of bacon into small pieces. Place the bacon in the Thermomix bowl and program 5 Min./120°C/Reverse blade direction/Speed 1 to brown it. Remove the bacon from the bowl and set aside.

Cut the chicken and vegetables

Cut 349 g of chicken breast into similarly sized pieces. Cut 1 small yellow pepper, 1 small red pepper, 1 small green pepper and 1 purple onion into strips.

Cook the chicken

Thermomix® Setting
8 min/Varoma/Giro a la izquierda/Velocidad 1 Varoma Reverse

Add the chicken to the Thermomix bowl and program 8 Min./Varoma/Reverse blade direction/Speed 1 to cook it. Stir occasionally with the spatula.

Add the vegetables

Thermomix® Setting
5 min/Varoma/Giro a la izquierda/Velocidad 1 Varoma Reverse

Add the peppers and purple onion to the Thermomix bowl. Program 5 Min./Varoma/Reverse blade direction/Speed 1 to cook the vegetables until tender.

Incorporate the bacon and cheese

Thermomix® Setting
2 min/140°F/Giro a la izquierda/Velocidad 1 60 Reverse

Add the reserved bacon to the Thermomix bowl and mix. Lower the temperature to 60°C. Sprinkle mozzarella or melting cheese on top. Program 2 Min./60°C/Reverse blade direction/Speed 1 to melt the cheese.
