Description

This chicken dish with mushrooms and tomatoes is a great way to use up leftover cooked chicken. It's a comforting and flavorful dish, perfect for a quick weeknight dinner. The creamy tomato sauce, enriched by the mushrooms, coats the chicken for a delicious result. I often prepare it when I have leftover roast chicken from Sunday, and it's always a hit! Accompanied by rice, pasta or potatoes, it's a complete and balanced meal. Feel free to add a pinch of herbs from Provence for more flavor.

Ingredients (9 ingredients)

  • 500 g Cooked chicken
  • 1 can Paris mushrooms
  • 1 can Tomato concentrate
  • 1 piece Onion
  • 50 cl Poultry stock
  • 2 c. à soupe Flour
  • 1 noix Butter
  • to taste Salt
  • to taste Pepper

Preparation of ingredients

If necessary, remove the skin and bones from the leftover cooked chicken. Cut the chicken into medium-sized pieces. Peel and finely chop the onion.

Chop the onion

Add the chicken and cook

Add the leftover cooked chicken to the Thermomix bowl and cook for 10 Min./100°C/Stufe 1.

Add the flour and mix

Pour the flour into the Thermomix bowl and mix for 20 Sek./Stufe 3.

Add the stock and mix

Add the poultry stock to the Thermomix bowl and mix for 10 Sek./Stufe 3.

Add the mushrooms and tomato

Drain the Paris mushrooms and add them to the Thermomix bowl. Also add the tomato concentrate, salt and pepper. Mix for 5 Sek./Stufe 2/Linkslauf.

Let the leftover chicken simmer for 15 Min./90°C/Stufe 1/Linkslauf.
