This chicken in sesame and pumpkin sauce is a rich and flavorful dish, perfect for autumn evenings. Preparation (10 steps)

Preparation of chicken broth with onions

Pour the chicken broth into the bowl. Add 180g of chopped onions. Set 15 Min./100°C/Stufe 1.

Partial cooking of the chicken

Add the pieces of chicken breast in the bowl with the broth and onions. Set 8 Min./100°C/Stufe 1/Linkslauf.

Cooling the chicken in the broth

Remove the bowl from the Thermomix® and let the chicken cool in the broth. This step is crucial to keep the meat tender and juicy.

Chopping the seeds and spices

Put the pepitas (pumpkin seeds), peanuts, sesame seeds, mixed spices, ground cloves and black pepper in the bowl. Chop for 30 Sek./Stufe 8.

Transfer of the mixture into a bowl

Transfer the mixture of seeds and spices into a bowl and set aside. This will be the base of our sauce.

Preparation of the puree of cherry tomatoes, onions and garlic

Put the cherry tomatoes, 180g of coarsely chopped onions and the clove of garlic in the bowl. Chop for 10 Sek./Stufe 5.

Addition of chili peppers, coriander and parsley

Add the chili peppers, coriander and parsley in the bowl. Chop intermittently for 5 Sek./Stufe 4, until a well blended but not completely chopped mixture is obtained.

Cooking the mixture with the pepitas

Add the pork lard in the bowl and set 3 Min./120°C/Stufe 1. Add the mixture with the pepitas and cook for 4 Min./120°C/Stufe 1.

Addition of the broth and the preparation with the cherry tomatoes

15 min/212°F/Speed 2 100

Add 600ml of cooled chicken broth and the preparation with the cherry tomatoes in the bowl. Set 15 Min./100°C/Stufe 2.

Final cooking of the chicken in the sauce

Thermomix® Setting
15 min/212°F/Speed 1 100

Add the chicken and an additional 500ml of broth in the bowl. Set 15 Min./100°C/Stufe 1/senza coperchio. Taste and adjust salt if necessary.
