Description

This chicken simmered with lemon and vegetables is a comforting and tasty dish, perfect for autumn or winter evenings. The chicken meat, tender and juicy, is imbued with the tangy aromas of lemon and the sweet flavors of vegetables. I have been preparing this dish for years and it is always a hit at home. It is a complete and balanced dish, ideal for a meal with family or friends. Feel free to vary the vegetables according to your tastes and the season. A real delight!

Ingredients (12 ingredients)

  • 1 kg Chicken
  • 1 piece Peeled carrot
  • 1 piece Onion
  • 3 piece Shallot
  • 1 piece Zucchini
  • 2 piece Tomato
  • 1 c. à soupe Olive oil
  • 1 piece Clove
  • 1 piece Bay leaf
  • 1 branche Thyme
  • Salt
  • Pepper

Preparation (7 steps)

Chicken preparation

Cut 1 shallot and half a tomato into small pieces. Insert them inside the chicken with the bay leaf.

Preparation of onions and shallots

Thermomix® Setting

Place the onion and 2 shallots in the Thermomix bowl. Chop finely for 3 Sek./Stufe 5.

Sauté the onions and shallots

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the olive oil to the bowl. Sauté the chopped onions and shallots for 3 Min./120°C/Stufe 1.

Adding the vegetables

Add the remaining tomatoes, carrot and zucchini, cut into small dice, to the Thermomix bowl.

Adding lemon and spices

Add 2 slices of lemon cut into small pieces and the clove to the Thermomix bowl.

Seasoning and adding water

Season with salt and pepper. Add two glasses of water (about 40cl) to the Thermomix bowl.

Cooking the chicken

Place the chicken in a casserole dish. Salt and pepper the chicken. Spread the remaining lemon and the sprig of thyme on top. Cover and cook over low heat for 2 hours 30 minutes, basting with the juice from time to time. The Thermomix is no longer used for cooking.
