Description

This Provençal poultry dish is a true concentrate of summer flavors. I love preparing this recipe because it is both simple and tasty. Juicy tomatoes, sweet onions, tender zucchini and black olives go perfectly with the chicken. It is a perfect dish for a sunny lunch or a friendly dinner with friends. The poultry is tender and fragrant, and the sauce is just divine. A real treat for the taste buds! Feel free to add other seasonal vegetables according to your desires.

Ingredients (8 ingredients)

  • 1 kg Chicken
  • 8 piece Tomato
  • 8 piece Onion
  • 1 piece Courgette
  • 100 g Black olives
  • White wine
  • 2 c. à soupe Olive oil
  • 4 feuilles Bay leaf

Preparation of the vegetables

Peel the onions and cut them in half. Wash the tomatoes and zucchini. Cut the tomatoes into wedges and the zucchini into slices.

Chop the onions

Put the onions in the Thermomix bowl and chop them for 3 sec./level 5.

Sauté the onions

Add the olive oil to the bowl and sauté the onions for 3 Min./120°C/level 1.

Adding tomatoes and zucchini

Thermomix® Setting
5 min/212°F/Speed 1 100

Add the tomato wedges and zucchini slices to the bowl. Program 5 Min./100°C/level 1.

Cooking the poultry

In a pan, heat a little olive oil and brown the poultry pieces on all sides. Salt and pepper.

Simmer the poultry and vegetables

Thermomix® Setting
40 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the browned poultry pieces to the Thermomix bowl with the vegetables. Add the white wine, bay leaf, salt and pepper. Program 40 Min./100°C/level 1/Left rotation.

Preparation of the olives

Meanwhile, put the black olives in a saucepan of cold water. Bring to a boil for a few minutes to desalinate them. Drain them.

Adding the olives

Add the drained black olives to the Thermomix bowl. Mix gently with the spatula.

Serve

Remove the bay leaves. Serve the poultry pieces in a deep dish and drizzle with the cooking sauce.
