Description

This Moroccan chicken with candied lemons is a savory and fragrant dish, perfect for special occasions or a special dinner. The combination of candied lemons, black olives and spices creates an explosion of flavors in the mouth. I have been preparing this dish for years and it is always a sensation with my guests. Ingredients (12 ingredients)

  • 2 piece Chicken
  • Candied lemons
  • 500 g Mild onion(s)
  • 500 g Black olives
  • Garlic
  • Coriander
  • Clove(s)
  • Saffron
  • Parsley
  • 1 tasse(s) Olive oil
  • Salt
  • Pepper

Preparation (9 steps)

Preparation of the chickens

Sing the chickens (if necessary). Introduce a whole candied lemon into each chicken to flavor the flesh. Slide two more candied lemon halves under the wings. Tie everything up. Salt and pepper generously.

Preparation of onions and garlic

Cut the onions in half and put them in the Thermomix bowl. Chop them for 3 Sek./Stufe 5. Add the garlic and chop again 3 Sek./Stufe 7.

Cooking onions and garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the olive oil (5 to 6 tbsp), coriander (1 tbsp), parsley, crushed pepper, cloves and saffron (6 g) to the bowl. Cook everything for 3 Min./120°C/Stufe 1.

Seizing the chickens

In a large skillet, brown the chickens on all sides in a little olive oil. Remove the chickens from the pan and set aside.

Cooking the chickens in the Thermomix

Thermomix® Setting
60 min/212°F/Speed 1 100

Put the cooked onions and garlic back into the Thermomix bowl. Place the browned chickens on the onion and garlic mixture. Pour water or broth halfway up the chickens. Close the bowl and cook for 60 Min./100°C/Stufe 1.

Turn the chickens

Gently turn the chickens halfway through cooking (after 30 minutes) so that they cook evenly. Add olive oil if necessary.

Reducing the sauce

15 min/Varoma/Speed 2 Varoma

Once the chickens are very tender, remove them from the bowl and set aside to keep warm. Set the Thermomix to 15 Min./Varoma/Stufe 2 without the lid to reduce the sauce.

Adding olives, lemons and livers

Thermomix® Setting
10 min/194°F/Linkslauf Speed 1 90 Reverse

Add the black olives (500 g), the candied lemons cut into quarters and the poultry livers (if you have any) to the bowl. Simmer for 10 Min./90°C/Linkslauf Stufe 1.

Serve

Serve the chicken with the olive and candied lemon sauce. Serve with couscous.
