Description

This "Spanish Style Chicken and Rice" is a dish that I often prepare when I want something comforting and flavorful. The chicken, browned to perfection, joins the rice, tomatoes and peas in a riot of Mediterranean flavors. A pinch of saffron and chili pepper add that extra touch that makes it irresistible. Perfect for a family dinner or an evening with friends, this dish is easy to prepare and everyone will like it. It can also be prepared in advance and reheated when serving, making it ideal for busier days.

Ingredients (12 ingredients)

  • 700 ml Water
  • Chicken
  • 320 g Rice
  • 400 g Canned peeled tomatoes
  • 150 g Peas
  • 3 tbsp Extra virgin olive oil
  • 1 piece Onions
  • 1 clove Garlic
  • 1 cube Beef bouillon cube
  • Salt
  • to taste Saffron
  • to taste Chili powder

Preparation (8 steps)

Chop onion and garlic

Put an onion and a clove of garlic in the bowl. Chop for 3 Sec./Speed 5.

Sauté onion and garlic

Add 3 tablespoons of extra virgin olive oil to the bowl and sauté for 3 Min./120°C/Speed 1.

Brown the chicken

In a pan, brown the chicken cut into pieces with a drizzle of oil until golden brown. Remove the chicken from the pan and set aside.

Add rice and tomatoes

Add 320g of rice to the bowl and 400g of canned peeled tomatoes. Mix for 10 Sec./Speed 2.

Add broth and spices

Add 700ml of water, a beef bouillon cube, salt, saffron and chili powder to the bowl. Mix for 5 Sec./Speed 3.

Cook the rice

25 min/212°F/Speed 1 100 Reverse

Add the browned chicken to the bowl. Cook for 25 Min./100°C/Speed 1/Reverse blade function.

Add the peas

Thermomix® Setting
5 min/212°F/Speed 1 100 Reverse

Add 150g of peas to the bowl and cook for another 5 Min./100°C/Speed 1/Reverse blade function.

Let it rest

Let the arroz con pollo rest in the bowl for 10 minutes before serving.
