Description

This Thermomix® recipe for Pillow Zipf is a sweet delicacy with curd cheese, butter and red currant jam. The preparation in the Thermomix® takes about 120 minutes and yields approximately 50 pieces. Ideal as a dessert or sweet childhood memory. Suitable for those who enjoy baking and love desserts.

Ingredients (6 ingredients)

  • 250 g Butter
  • 250 g Curd cheese (20% fat, Quark)
  • 250 g plain flour
  • Red currant jam (redcurrant jam, better jelly)
  • Icing sugar for sprinkling (powdered sugar)
  • 1 Stück Egg (beaten for gluing)

Prepare dough

Put butter, curd cheese and flour in the mixing bowl and knead to a smooth dough. 2 min./kneading setting

Cool dough

Wrap the dough in cling film and let it cool in the refrigerator for at least 60 minutes.

Roll out dough and cut squares

Spread flour on the work surface and roll out part of the curd cheese mixture thinly. Cut even squares with a dough wheel (approx. 4 cm wide).

Fill and glue

Place red currant jam in the middle of the squares. Brush 2 sides with beaten egg and stick together.

Bake

Bake the Pillow Zipf at 200 degrees top/bottom heat in the preheated oven until they are crispy on the outside. This takes about 10-15 minutes.

Sprinkle

Sprinkle with icing sugar after baking.
