Description

This Leonese style potato dish is a comforting classic, perfect for colder days. The key is in the sofrito, which gives it a deep and delicious flavour. I always prepare it with a good white wine and homemade meat broth to intensify the flavour. It is a simple dish but full of nuances, ideal to share with family or friends. It is also a very nutritious and economical vegetarian option. Go ahead and try it, you will love it! You can add a little smoked paprika for an extra touch.

Ingredients (12 ingredients)

  • 500 gr Potatoes
  • 2 piece Eggs
  • Flour
  • 1 piece Onion
  • 2 clove Garlics
  • 150 ml White Wine
  • 0.5 litro Meat Broth
  • Saffron
  • Parsley
  • 1 hoja Bay Leaf
  • Oil
  • Salt

Preparation (8 steps)

Preparation of the potatoes

Peel the potatoes, wash them, dry them and cut them into slices approximately 1 cm thick. Set aside.

Battering and frying the potatoes

Coat the potato slices in flour, making sure they are well covered. Beat the 2 eggs with a pinch of salt in a bowl. Dip the floured potatoes in the beaten egg. Fry the battered potatoes in plenty of hot oil until golden brown on both sides. Remove the potatoes and place them on kitchen paper to remove excess oil. Set aside.

Preparation of the mash

In a mortar, crush the 2 cloves of garlic, a few strands of saffron, a little chopped fresh parsley and a pinch of salt until a paste is obtained. Set aside.

Chopping the onion

Insert the 1 onion into the glass and chop 3 Sec./Speed 5. Lower the remains of the walls with the spatula.

Sautéing the onion

Add 3 tablespoons of oil to the glass and sauté the chopped onion for 3 Min./120°C/Speed 1.

Add flour and mash

Thermomix® Setting

Add 1 tablespoon of flour to the glass and stir 1 Min./120°C/Speed 1. Incorporate the reserved mash and mix 30 Sec./Speed 2.

Incorporate wine and broth

Thermomix® Setting
2 min/212°F/Speed 1 100

Pour the 150 ml of white wine into the glass and program 2 Min./100°C/Speed 1, without the measuring cup, so that the alcohol evaporates. Add the 500 ml of meat broth and mix 10 Sec./Speed 3.

Cooking the potatoes

Thermomix® Setting
30 min/194°F/Giro a la izquierda/Velocidad cuchara 90 Reverse

Carefully place the fried potatoes in the glass. Add a bay leaf (optional). Program 30 Min./90°C/Reverse/Spoon speed. Stir gently with the spatula from time to time.
