Who doesn't love caramel apples? These red caramel apples are a timeless classic, perfect for a birthday party or as a sweet autumn treat. Preparation is quick and easy, especially with the help of our trusty Thermomix®. The caramel syrup, enriched with a touch of honey and vanilla, envelops the apples in a sweet and crunchy embrace. A delicious dessert that will win over young and old alike. Try them, they are irresistible! You can also vary the color of the caramel for an even more spectacular effect.

  • 100 g water
  • 200 g sugar
  • 20 g honey
  • 1 packet vanillin
  • red gel food coloring

In the Thermomix bowl, pour 100 g of water, 200 g of sugar, 20 g of honey and 1 sachet of vanillin. Mix well.

Cook the syrup in the bowl for 15 minutes at 100°C, Speed 2, without the measuring cup.

Add a sufficient quantity of red gel food coloring to the syrup in the bowl and mix for 5 Sec./Speed 3, until a uniform color is obtained.

Preparation of the apples

Remove the core from the 4 apples and skewer them with a wooden skewer. Make sure they are firmly in place.

Caramelizing the apples

Dip each apple in the hot syrup in the bowl and gently turn it with a spatula until it is completely covered. Be careful not to burn yourself.

Drying the apples

Let the excess syrup drip off and place the apples on a sheet of baking paper. Make sure they don't touch.

Cooling and serving

Let the apples dry for about 15-20 minutes until the outer layer is shiny and crunchy. Serve the caramel apples immediately.

I still remember when, as a child, my grandfather would take me to the patron saint's festival in our village and, among the many delicacies, caramel apples were my fixed destination. That sweet and crunchy taste, combined with the intense scent of caramel, is an emotion that still accompanies me today. I wanted to recreate that magic, simplifying the process thanks to the Thermomix®, but keeping the authenticity of the taste intact. The choice of ingredients is essential for the success of this recipe. The apples, preferably of the Granny Smith or Fuji variety, must be firm and slightly acidic to create a pleasant contrast with the sweetness of the caramel. The water serves to dilute the sugar and promote the formation of the syrup, while the sugar itself is the key element for caramelization. The honey, with its delicate aroma, adds a note of complexity and helps to make the caramel softer and less crystallized. The vanillin, finally, enhances the aroma and sweetness of the dessert. The red gel food coloring is purely aesthetic, but contributes to creating an eye-catching visual effect. To obtain a perfect caramel, it is important to respect the cooking times and temperatures indicated. During the cooking phase in the Thermomix®, it is essential to remove the measuring cup to allow the steam to escape and promote the concentration of the sugar. If you notice that the syrup tends to crystallize, you can add a teaspoon of lemon juice to avoid it. When dipping the apples in the caramel, it is important to be careful not to burn yourself and to cover them completely and evenly. To facilitate drying, you can place the apples on a wire rack instead of on parchment paper, so that the air can circulate freely. For a vegetarian or vegan version, you can replace the honey with maple syrup or agave syrup. To vary the flavor, you can add spices such as cinnamon, ginger or cloves to the syrup during cooking.
