Description

These pickled pears are a delicious classic that I loved as a child. The preparation is easier than you think and the Thermomix® helps to create the perfect syrup. The pears become soft and juicy, the syrup aromatic and not too sweet. Ideal as a dessert, side dish to ice cream or simply as a snack. Especially in autumn, when pears are in season, they simply taste irresistible. A great recipe to preserve fresh fruit and preserve the taste of summer!

Ingredients (4 ingredients)

  • 2 kg pears
  • 400 g sugar
  • 1 l water
  • lemon juice

Preparation of the Pears

Pour 1 l of water and the juice of half a lemon into a bowl. Peel the pears, halve them and remove the core. Immediately place the prepared pears in the lemon water to prevent browning.

Put 400 g of sugar and 1 l of water into the mixing bowl. Cook for 20 min./100°C/speed 1 without measuring cup until a syrup forms.

Cooking the Pears in Syrup

Remove the pears from the lemon water and add them to the syrup in the mixing bowl. Cook for 20 min./90°C/reverse speed 1 until the pears are soft but not overcooked.

Cooling and Serving

Carefully remove the pears from the mixing bowl and place them in jars. Pour the syrup over them so that the pears are completely covered. Let cool and serve. The pickled pears can be stored in the refrigerator.

Syruped pears are a childhood memory, a flavor that takes me back to autumn afternoons spent in my grandmother's kitchen. She prepared them in large quantities, using the pears from her small orchard, and the sweet and spicy aroma filled the whole house. It was a ritual, a way to preserve the goodness of the season and enjoy it during the colder months. I have tried to replicate her recipe for years, and with the help of the Thermomix I have managed to obtain a result that is very similar, if not even better! Pears are the main ingredient, of course. I recommend using ripe but firm pears, such as Abate Fetel or Kaiser. Their consistency, after cooking, will be perfect: soft but not mushy. Sugar is essential for the preparation of the syrup. I prefer white granulated sugar, because it is neutral and does not alter the flavor of the pears. Water is used to dilute the sugar and create the base of our syrup. Lemon juice, finally, is a secret ingredient that adds a touch of acidity that balances the sweetness of the syrup and helps to preserve the light color of the pears, preventing them from oxidizing. For preparation with the Thermomix, it is important to carefully follow the cooking times. During the preparation of the syrup, make sure that the temperature reaches 100°C. The absence of the measuring cup favors the evaporation and concentration of the syrup. When you add the pears, use the "reverse" function to avoid breaking them during cooking. If the pears are particularly ripe, it may be necessary to slightly reduce the cooking time. There are several variations of this recipe. For a vegan version, you can replace the granulated sugar with whole cane sugar or agave syrup. For a more aromatic touch, you can add spices such as cinnamon, cloves or star anise during the preparation of the syrup. A pinch of grated fresh ginger can give a slightly spicy and very interesting flavor. Syruped pears are delicious on their own, as a light and refreshing dessert. They can be served with a scoop of vanilla or cream ice cream, or with a spoonful of fresh ricotta cheese. They are also perfect as an accompaniment to roasted meats, such as pork or poultry. Their sweet and sour taste contrasts pleasantly with the rich flavor of the meat. To preserve the syruped pears, it is important to sterilize the jars before filling them. After filling the jars with the pears and syrup, close them tightly and boil them for about 20 minutes to create a vacuum. In this way, the pears will keep for several months in a cool and dry place. Once the jar is opened, store in the refrigerator. Syruped pears can also be prepared a day in advance, so that the flavors blend better.
