Description

These rustic biscotti with dried fruit are a poem! I especially like to make them in autumn and winter, when the desire for something sweet and crunchy increases. The combination of the shortcrust pastry and the filling of nuts, honey and chocolate is simply irresistible. They are perfect with coffee or tea and can be prepared wonderfully. An absolute must for all lovers of traditional pastries! And with the Thermomix® the preparation is very easy.

Ingredients (13 ingredients)

  • 250 q.b. Flour 00
  • 100 q.b. Butter
  • 1 piece Egg
  • 80 q.b. Sugar
  • 1 pinch Salt
  • 1 q.b. Vanilla extract
  • 50 q.b. Hazelnuts
  • 50 q.b. Walnut kernels
  • 50 q.b. Almonds
  • 30 q.b. Honey
  • 50 q.b. Dark chocolate chips
  • 20 q.b. Breadcrumbs
  • 30 q.b. Milk

Preparation (6 steps)

Chop butter and mix with flour

Cut cold butter into pieces and put in the mixing bowl. Add flour, sugar and vanilla extract. Mix for 20 sec/speed 4.

Prepare the dough

Add a pinch of salt and the egg. Process for 30 sec/speed 5 to a smooth dough. Wrap the dough in cling film and refrigerate for at least 30 minutes.

Chop nuts

Put hazelnuts, walnuts and almonds in the mixing bowl and chop coarsely for 5 sec/speed 5. Transfer and set aside.

Prepare filling

Mix chopped nuts, honey, chocolate chips, breadcrumbs and milk in a bowl until a homogeneous mass is formed.

Shape cookies

Roll out the dough on a sheet of baking paper into a long rectangle. Spread the nut-chocolate mixture in the middle. Use the baking paper to form the dough into a long roll.

Bake cookies

Preheat the oven to 180°C. Place the dough roll on a baking sheet and bake for about 20 minutes. Let cool completely before cutting into 2-3 cm thick slices.
