Description

These stuffed grilled tomatoes are an absolute highlight for every barbecue party! I have been making them for years and they are always a hit. The combination of juicy tomatoes, creamy mozzarella and crispy bread cubes is simply irresistible. The preparation is very simple and goes with the Thermomix® very quickly. Perfect as a starter or side dish for grilling. The fresh herbs and balsamic give the dish a wonderful Mediterranean touch. Vegetarian and simply delicious!

Ingredients (9 ingredients)

  • 4 piece large Tomatoes
  • 1 clove Garlic
  • 1 Handvoll Basil
  • 1 Mozzarella Mozzarella
  • 2 slice Toast bread
  • 2 tbsp Olive oil
  • 2 tbsp Balsamic
  • Salt
  • Pepper

Preparation (6 steps)

Prepare tomatoes

Wash the tomatoes, cut off the lids and carefully hollow them out with a spoon. Place the hollowed-out pulp in the mixing bowl.

Chop tomato pulp

Chop the tomato pulp in the mixing bowl for 3 sec./level 4 and then transfer to a separate bowl.

Chop garlic

Peel the clove of garlic, put it in the mixing bowl and chop for 3 sec./level 7. Scrape down from the edge with the spatula.

Dice and roast toast

Thermomix® Setting
3 min/248°F/Speed 1 120

Cut the toast into small cubes. Put 1 tbsp of olive oil in the mixing bowl, add the bread cubes and the chopped garlic and roast for 3 min./120°C/level 1 without a measuring cup until the cubes are crispy.

Prepare filling

Put the roasted bread cubes, the chopped tomato pulp, half of the basil, the finely chopped mozzarella, 1 tbsp of olive oil and the balsamic vinegar in a bowl. Season with salt and pepper and mix well.

Fill and grill tomatoes

Fill the mixture into the hollowed-out tomatoes, place in an aluminum dish and grill on the grill for about 8-10 minutes. Serve sprinkled with the remaining basil.
