Description

I love preparing these stuffed tomatoes! I remember my grandmother always made them in the summer, when the tomatoes from the garden were at the peak of their sweetness. This version, with ground meat, bean paste and black mushrooms, is a real comfort food. The preparation is quick and easy, perfect for a family lunch or a dinner with friends. The flavorful filling and the sweetness of the tomato combine perfectly. A unique dish that tastes of home and tradition, ideal to be enjoyed warm or at room temperature.

Ingredients (10 ingredients)

  • 250 g ground pork meat
  • 2 piece firm tomatoes
  • 0.25 cup bean paste
  • 0.25 cup black mushrooms
  • 0.25 cup green onions
  • 1 clove garlic
  • 1 tsp sugar
  • 0.5 tsp soy sauce
  • 0.25 tsp black pepper
  • 3 tbsp oil

Preparation (8 steps)

Preparation of the tomatoes

Cut the tomatoes in half and gently empty them of the seeds with a teaspoon. Rinse them under running water and turn them upside down on a clean tea towel to dry them of excess water. Set aside.

Preparation of the filling

Insert the garlic into the bowl and chop for 3 Sec./Level 7. Transfer to a bowl. Add the chopped green onion, the crumbled bean paste and the chopped black mushrooms to the bowl. Mix well.

Marinating the meat

In a bowl, marinate the ground meat with the sugar, soy sauce and black pepper. Mix well to combine all the ingredients.

Filling the tomatoes

Carefully fill each tomato half with the marinated meat, pressing lightly to compact the filling.

Cooking the meat (in a pan)

Heat a non-stick pan over medium heat. When the pan is hot, add the oil. Place the stuffed tomatoes in the pan with the opening facing down. Cook until the meat is golden brown on that side.

Completing the cooking (in a pan)

Remove the tomatoes from the pan and cook the meat on the other side until golden brown. When the meat is ready, put the tomatoes back like a cap on the filling.

Final cooking of the tomatoes (in a pan)

Turn the tomatoes with the opening facing upwards. Cook for a few minutes, until the tomatoes soften slightly.

Serve

Remove the tomatoes from the pan and arrange them on a plate upside down. Serve hot as a side dish with rice or as an appetizer.
