Description

This dish is a real treat! Tender strips of pork fillet in a creamy sauce with an exotic curry-vanilla note. The sweetness of the cherry tomatoes harmonizes wonderfully with the spicy curry and the fine vanilla. I like to make this dish when I need something quick, but still want something special on the table. It is perfect for a quick lunch or an uncomplicated dinner. Serve with rice or pasta. If you like it a little spicier, you can add a pinch of chili.

Ingredients (8 ingredients)

  • 500 g Pork fillet
  • 250 g Cherry tomatoes
  • 4 piece Spring onions
  • 1 piece Vanilla bean(s)
  • 2 tbsp Butter
  • 1 tbsp Curry powder
  • 120 ml Cider
  • 250 ml Cream

Preparation of ingredients

Cut the meat into strips just under 1 cm wide. Wash and halve the tomatoes. Wash, clean and finely slice the spring onions. Cut the vanilla bean lengthwise, unfold it and scrape out the pulp with the back of a knife. Cut the pod into 4 pieces.

Sauté spring onions and vanilla bean

Put the spring onions and the vanilla bean pieces into the mixing bowl and chop for 3 sec./speed 5. Then add 2 tbsp of butter and sauté for 3 min./120°C/speed 1.

Add curry and vanilla pulp

20 sec/212°F/Speed 1 100

Add 1 tbsp of curry powder and the vanilla pulp to the spring onions in the mixing bowl and sauté for 20 sec./100°C/speed 1.

Prepare the sauce

Thermomix® Setting
5 min/212°F/Speed 2 100

Add 120 ml of cider or apple juice and 250 ml of cream to the mixing bowl, add 250 g of halved cherry tomatoes and cook for 5 min./100°C/speed 2. Season with salt and pepper.

Add meat and let steep

Thermomix® Setting
2 min/194°F/Linkslauf Speed 1 90 Reverse

Add the meat, which has been previously fried in the pan, to the mixing bowl and let it steep in the sauce for 2 min./90°C/reverse rotation speed 1.
