Description

This recipe for Pork Loin with Nectarines is a real treat! I love how the sweetness of the peaches perfectly complements the savory pork. Although the preparation is a bit time-consuming, the result is absolutely worth it. Especially in the summer, when peaches are in season, this dish is a highlight. Served with creamy polenta or a fresh salad, it is an ideal lunch or dinner for the whole family. The sage gives the dish a special touch. A tip: The dish can also be prepared well in advance and served the next day, then the flavors are even more intense!

Ingredients (11 ingredients)

  • 1.3 kg pork loin
  • 2 piece onions
  • 2 piece carrots
  • 1 coste celery
  • 5 piece nectarines
  • 4 foglie sage
  • 1 bicchiere white wine
  • 1 bicchiere water
  • olive oil
  • coarse salt
  • sage

Preparation (8 steps)

Vegetables in the bowl

2 peeled onions, quartered, 2 peeled carrots, cut into pieces, and 1 celery stick, cut into pieces, in the bowl. Close the lid and chop for 5 Sec./Level 5.

Brown the meat

In a large pan, heat plenty of olive oil. Brown 1.3 kg of pork loin on all sides until golden brown. Remove the meat from the pan and set aside.

Sauté the vegetables

Thermomix® Setting
5 min/248°F/Speed 1 120

Pour the chopped vegetables in the bowl into the pan where the meat was browned and sauté for 5 Min./120°C/Level 1.

Add the ingredients

Add 5 nectarines cut into coarse wedges, 4 sage leaves, 1 glass of white wine, 1 glass of water and coarse salt to taste in the pan.

Cook the loin

Thermomix® Setting
60 min/212°F/Speed 1 100

Place the pork loin in the pan with the vegetables and liquid. Cover with the lid and cook for 60 Min./100°C/Level 1, turning the meat occasionally and basting it with the sauce.

Prepare the sauce

Thermomix® Setting
10 min/Varoma/Speed 2 Varoma

Remove the loin from the pan and set aside. Transfer the cooking sauce to the bowl and cook for 10 Min./Varoma/Level 2 without the measuring cup, to reduce the sauce.

Blend the sauce

Thermomix® Setting
30 sec/Speed 10

Blend the sauce for 30 Sec./Level 10 to create a smooth and homogeneous peach sauce.

Serve

Cut the loin into slices and arrange them on a tray. Cover the slices with the peach sauce and decorate with a few sage leaves.
