Description

This pork stew gardener style is a comforting and flavorful dish, perfect for the cooler days. The pork is slow-cooked with a variety of fresh vegetables, aromatic herbs and a touch of white wine, creating a delicious and thick sauce. I often prepare it in autumn and winter, when the vegetables are at their best. It is ideal to share with family or friends, and can be accompanied with white rice or mashed potatoes. A simple but very tasty dish that you will surely love. Also, it is quite economical and easy to prepare, so do not hesitate to try it!

Ingredients (15 ingredients)

  • 1200 g pork loin
  • 2 piece green peppers
  • 1 piece red pepper
  • 1 piece spring onion
  • 2 piece large carrots
  • 1 kg potatoes
  • 4 clove garlic
  • Meat broth
  • 2 hoja bay leaf
  • 2 piece ripe tomatoes
  • 1 tbsp herbes de Provence
  • 1 tsp pimentón de la vera
  • 1 container white wine
  • 1 chorro soy sauce
  • Extra virgin olive oil

Preparation (7 steps)

Preparation of the vegetables

Cut the green peppers (2 units), red pepper (1 unit), spring onion (1 unit), large carrots (2 units) and ripe tomatoes (2 units) into small pieces. Peel and chop the garlic cloves (4 cloves).

Vegetable stir-fry

Add the chopped vegetables and 40 ml of extra virgin olive oil to the Thermomix glass. Sauté for 8 Min./120°C/Speed 1.

Add tomato and paprika

Thermomix® Setting
2 min/248°F/Velocidad 1 120

Add the tomatoes cut into small pieces and 1 teaspoon of pimentón de la vera to the glass. Stir for 2 Min./120°C/Speed 1.

Incorporate wine and broth

Thermomix® Setting
3 min/Varoma/Velocidad 1 Varoma

Add 1 glass of white wine and let the alcohol evaporate for 3 Min./Varoma/Speed 1 without the beaker. Then, add meat broth to cover the vegetables, 2 bay leaves and salt to taste.

Meat cooking

Thermomix® Setting
30 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Cut the pork loin (1200 g) into cubes, season with salt and pepper and add 1 tablespoon of herbes de Provence. Add the meat to the Thermomix glass and program 30 Min./100°C/Reverse direction/Spoon speed. If necessary, add more broth or water.

Potato preparation

Peel the potatoes (1 kg) and cut them into not very large cubes. Fry the potatoes in a pan with hot oil until golden brown.

Incorporate potatoes and soy sauce

Thermomix® Setting
5 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Add the fried potatoes to the Thermomix glass and program 5 Min./100°C/Reverse direction/Spoon speed. Add 1 splash of soy sauce and taste for salt. Adjust seasoning if necessary.
