Description

This cherry dessert with almond brittle is an absolute eye-catcher and tastes simply heavenly! The combination of sweet cherries, creamy cream cheese and crispy almond brittle is a poem. I especially like to make it in the summer when the cherries are fresh from the tree. It is perfect for birthdays or other festive occasions, but can also be prepared well when you are expecting guests. The preparation is a bit more complex, but it is definitely worth it! A great dessert that is guaranteed to please everyone.

Ingredients (10 ingredients)

  • 75 g Sugar
  • 7 g Butter
  • 75 g Almonds, chopped
  • 600 g Sweet cherries, freshly washed and pitted
  • 200 g Cream cheese, double cream
  • 200 g Whipping cream
  • 30 g Icing sugar
  • 1 packet Vanilla sugar
  • 0.5 packet Cream stiffener
  • 1 Spritzer Lemon

Preparation (11 steps)

Caramelize sugar

Put 75 g sugar in a coated pan and melt over medium heat. Do not stir until the sugar is liquid.

Prepare caramel

Once the sugar is liquid, add 7 g butter (approx. 1 tsp) and stir. Caramelize the sugar until light brown.

Add almonds

Add 75 g chopped almonds to the pan and stir briefly until everything is covered in caramel.

Cool the brittle

Turn the mixture onto baking paper and smooth/press with a teaspoon. Place another sheet of baking paper on top of the mixture and roll flat with a rolling pin. Let cool.

Chop the brittle

Break the cooled brittle into small pieces and set aside.

Prepare cherries

Wash, pit and, if very large, halve 600 g cherries.

Prepare cream cheese

Thermomix® Setting
20 sec/Speed 3

Put 200 g cream cheese, 100 ml cream, 30 g icing sugar and 1 packet vanilla sugar and a splash of lemon into the mixing bowl and mix for 20 sec./speed 3.

Whip the cream until stiff

Thermomix® Setting
2 min/Speed 3.5

Insert the whisk. Add 100 ml cream and 1/2 packet cream stiffener to the mixing bowl and whip until stiff for 2 min./speed 3.5. Remove the whisk.

Fold in the cream

Carefully fold the whipped cream into the cream cheese.

Layer dessert

Layer in 4 dessert glasses or a bowl: A layer of cherries, then brittle pieces, spread the cream on top. Again cherries and brittle pieces.

Finish and chill dessert

Finish with a layer of cream and refrigerate for at least 2 hours.
