Description

This recipe for potato and quark flatbread is a hearty main course that is both vegetarian and filling. Preparation takes about an hour and yields 9 servings. Ideal for those who love traditional cuisine and want to put something special on the table.

  • 400 g cooked, floury potatoes
  • 250 g wheat flour, smooth
  • salt
  • lukewarm milk
  • 1 TL schnapps
  • 500 g low-fat quark, at room temperature
  • 380 g wheat flour, smooth
  • 20 g butter, melted
  • 1 egg, at room temperature
  • salt
  • 1 TL schnapps

Preparation (6 steps)

Prepare potatoes

Let 400 g of cooked, floury potatoes cool, then mash or finely grate.

Prepare dough for potato flatbread

Thermomix® Setting
2 min/Kneading speed

Place the grated potatoes, approx. 250 g wheat flour, salt and possibly lukewarm milk, as well as 1 tsp schnapps, into the mixing bowl. Use the Patix dough knife for 2 min./kneading stage to process into a smooth dough.

Prepare quark

Have 500 g of low-fat quark ready at room temperature.

Prepare dough for quark flatbread

Thermomix® Setting
2 min/Kneading speed

Place 500 g low-fat quark, 380 g wheat flour, 20 g melted butter, 1 egg, salt and 1 tsp schnapps into the mixing bowl. Use the Patix dough knife for 2 min./kneading stage to process into a smooth dough.

Process doughs

Roll out both doughs very thinly and cut into desired shapes.

Bake flatbreads

Heat plenty of fat in a pan. The flatbreads must be able to float in the fat. Bake the flatbreads in it until golden brown, pouring hot fat over them until they form a "belly" with a cavity.
