Description

This baked bread pudding is a comforting and flavorful dessert, perfect for a cozy autumn evening or a festive Christmas brunch. I've been making this recipe for years, and it's always a hit! The combination of creamy custard, slightly salted buttered bread, plump sultanas, and zesty lemon creates a delightful balance of flavors and textures. It's surprisingly easy to prepare, especially with the Thermomix®, and the aroma that fills the kitchen while it bakes is simply divine. Feel free to soak the sultanas in a bit of brandy for an extra boozy kick! This pudding is best served warm, straight from the oven.

Ingredients (10 ingredients)

  • 250 ml full-fat milk
  • 300 ml double cream
  • 1 piece vanilla pod
  • 3 piece large eggs
  • 40 g golden caster sugar
  • 8 slices day-old white crusty bread
  • 50 g slightly salted butter
  • 75 g mix sultanas
  • 0.5 piece lemon zest
  • 25 g demerara sugar

Preparation (7 steps)

Prepare the custard

Thermomix® Setting
5 min/194°F/Speed 1 90

Pour the full-fat milk, double cream, and vanilla pod (with scraped-out seeds, if using) into the Thermomix mixing bowl. Heat for 5 Min./90°C/Stufe 1. Remove the vanilla pod after heating.

Whisk eggs and sugar

Thermomix® Setting
20 sec/Speed 4

Add the whole large eggs and golden caster sugar to the Thermomix mixing bowl. Mix for 20 Sek./Stufe 4 until well combined.

Combine custard ingredients

10 sec/Speed 2

With the Thermomix running at Stufe 2, slowly pour the warm milk mixture over the egg mixture for 10 Sek./Stufe 2. This ensures a smooth and well-combined custard.

Prepare the bread

Lightly butter an ovenproof dish approximately 20cm x 25cm x 5cm. Cut the crusts from the 8 slices of day-old white crusty bread, then butter both sides of the bread with the slightly salted butter and cut into triangles. Lay half of the bread slices in the bottom of the dish so that they are slightly overlapping.

Add fruit and lemon zest

Mix the mix sultanas with the lemon zest and sprinkle half of the mix over the bread. Layer the rest of the bread on top then sprinkle over the remaining fruit.

Pour custard and soak

Pour the custard over the bread and fruit mixture. Leave to soak for at least 30 mins, or longer in the fridge, if you like.

Bake the pudding

Sprinkle over the demerara sugar and bake in a preheated oven at 180°C (160°C fan/gas mark 4) for 35-40 mins until golden brown and puffed up.
