Ingredients (17 ingredients)

  • 8 piece bone-in, skin-on chicken thighs (5 ounce)
  • 2 tsp salt
  • 1 tbsp olive oil
  • 0.5 cup diced onion
  • 1 pinch salt
  • 1 tbsp white sugar
  • 2 clove garlic, minced
  • 1 medium orange, zested
  • 0.66666666666667 cup freshly squeezed orange juice
  • 2 tbsp freshly squeezed lemon juice
  • 2 cup chicken broth
  • 1 pinch ground cinnamon
  • 1 pinch cayenne pepper
  • 0.125 tsp freshly ground black pepper
  • 1 tbsp caraway seeds
  • 1 splash water, or as needed (Optional)
  • 1 tsp grated orange zest

Preparation (11 steps)

Season the chicken

Generously season the chicken thighs on both sides with 2 teaspoons of salt. Set aside.

Prepare the onion

Add ½ cup diced onion to the mixing bowl and chop for 3 seconds/speed 5.

Sauté the onion

Add 1 tablespoon of olive oil, a pinch of salt, and 1 tablespoon of sugar to the mixing bowl. Cook for 3 minutes/120°C/speed 1.

Add garlic

Add 2 cloves minced garlic to the mixing bowl and cook for 30 seconds/120°C/speed 1.

Add orange and lemon juice

Add orange zest, ⅔ cup freshly squeezed orange juice, 2 tablespoons freshly squeezed lemon juice, and 2 cups chicken broth to the mixing bowl. Also add 1 pinch of ground cinnamon, 1 pinch of cayenne pepper, and ⅛ teaspoon of freshly ground black pepper.

Reduce the sauce

Thermomix® Setting

Cook for 3 minutes/Varoma/speed 1, without the measuring cup, until the liquids are reduced by half.

Sear the chicken

Heat olive oil in a large skillet over high heat. Add chicken, skin-side down, to the hot oil and sear until skin is golden brown and releases from the bottom of the skillet, 4 to 5 minutes. Turn and sear on the other side for 3 to 4 minutes. Turn off the heat and remove chicken to a plate. Drain fat from the skillet and reserve for another use.

Combine chicken and sauce

Preheat the oven to 350 degrees F (175 degrees C). Place the skillet back on the stove. Transfer chicken and any accumulated juices back into the skillet; make sure the skin is facing up. Baste chicken with the liquid and sprinkle 1 tablespoon of caraway seeds over top.

Bake the chicken

Cover and bake in the center of the preheated oven for 1 hour. Remove from the oven, remove the lid, and baste chicken.

Finish baking

Return to the oven and bake, uncovered, until no longer pink at the bone and the juices run clear, about 20 more minutes, adding a splash of water if the liquid dries out. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

Garnish and serve

Remove from the oven and baste again. Garnish with 1 teaspoon grated orange zest. Serve and enjoy!
