Description

This chicken dish, infused with saffron and sherry vinegar, is a delightful Mediterranean-inspired meal. The combination of sweet honey, tangy vinegar, and aromatic spices creates a unique and flavorful experience. I've been making this for my family for years, and it's always a hit! The raisins add a touch of sweetness, while the toasted pine nuts and fresh coriander provide a lovely textural contrast. It's perfect for a cozy autumn dinner and is best served with crusty bread to soak up the delicious sauce. This recipe is also great for meal prepping!

Ingredients (14 ingredients)

  • 1 pinch saffron
  • 0.5 cube chicken stock cube
  • 2 tbsp olive oil
  • 1 piece small onion
  • 2 piece large chicken breasts
  • 1 pinch ground cinnamon
  • 1 piece red chilli
  • 2 tbsp sherry vinegar
  • 1 tbsp clear honey
  • 6 piece cherry tomatoes
  • 1 tbsp raisins
  • 1 handful coriander
  • 25 g toasted pine nuts
  • 1 piece crusty bread

Preparation (7 steps)

Prepare saffron stock

Add a large pinch of saffron and ½ chicken stock cube to 100ml of hot water in a bowl and let it soak. No Thermomix settings are needed for this step.

Chop the onion

Thermomix® Setting

Place 1 small onion into the mixing bowl and chop for 3 Sec./Stufe 5.

Sauté the onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp olive oil to the mixing bowl and sauté for 3 Min./120°C/Stufe 1.

Sear the chicken

Heat a pan with some olive oil. Add 2 large chicken breasts and cook for a few minutes until browned all over. Remove the chicken from the pan and set aside. No Thermomix settings are needed for this step.

Add spices and cook

Add a large pinch of ground cinnamon and 1 red chilli to the mixing bowl and cook for 2 Min./120°C/Stufe 1.

Add remaining ingredients and simmer

Thermomix® Setting
10 min/212°F/Speed 1 100

Add the saffron stock, 2 tbsp sherry vinegar, 1 tbsp clear honey, 6 cherry tomatoes, and 1 tbsp raisins to the mixing bowl. Place the seared chicken on top. Cook for 10 Min./100°C/Stufe 1.

Final touches

Remove the chicken from the mixing bowl. Scatter a handful of coriander and 25g toasted pine nuts over the chicken. Serve with crusty bread. No Thermomix settings are needed for this step.
