Description

This dish is a true autumn classic! Tender pieces of chicken, combined with the sweetness of chestnuts, create a wonderful combination of flavors. I always make this recipe when the first chestnuts are in the market. The preparation is straightforward and the result is a hearty, warming dish that is perfect for cozy autumn evenings. The soy sauce adds a special touch to the whole thing. Served with fresh rosemary, it is a feast for the senses! Ideal for a quick lunch or a relaxed dinner with friends.

Ingredients (10 ingredients)

  • 500 g chicken morsels
  • 300 g chestnuts
  • 2 foglie bay leaf
  • 1 rametto rosemary
  • 30 g flour
  • 60 g white wine
  • 30 g soy sauce
  • 100 g water
  • olive oil
  • fine salt

Preparation (7 steps)

Prepare chestnuts

Let the chestnuts cook in a pot with water and bay leaves for about 40 minutes, until they are soft. Then drain, peel and remove the inner skin. Set the cooked and peeled chestnuts aside.

Prepare chicken

Dust the chicken pieces with flour so that they are evenly covered. This will ensure a nice crust when frying.

Fry chestnuts

Heat some olive oil with a sprig of rosemary in a pan. Add the chestnuts, salt and fry for 1-2 minutes until lightly browned. Remove the fried chestnuts from the pan and set aside.

Fry chicken

Add the floured chicken pieces to the same pan and fry well on all sides until golden brown. Turn regularly.

Deglaze and simmer

Deglaze the chicken with white wine and let the alcohol evaporate. Then add water and soy sauce and stir well. Add the fried chestnuts back to the pan.

Complete

Reduce the heat and simmer the dish until the sauce has thickened and the chicken is cooked through. Stir occasionally so that nothing burns. The sauce should have a creamy consistency and coat the chicken and chestnuts.

Serve

Serve the finished dish hot, pour over the sauce and garnish with fresh rosemary needles.
