Description

This Lemon Herb Chicken is a family favorite! I've been making it for years, and it's always a hit, especially during grilling season. The chicken marinates in a zesty lemon and herb mixture, making it incredibly flavorful and tender. It's perfect for a summer barbecue or a simple weeknight dinner. The fresh rosemary, thyme, and oregano really make this dish special. It's also a great way to use up those herbs from your garden! This recipe is naturally high in protein and relatively healthy, making it a guilt-free pleasure.

Ingredients (7 ingredients)

  • 0.5 cup olive oil
  • 2 piece medium lemons, juiced
  • 3 clove garlic, chopped
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh oregano
  • 4 pound chicken, cut into pieces

Chop Garlic

Place 3 cloves of garlic into the mixing bowl and chop for 3 seconds/Stufe 7.

Prepare Marinade

In a glass dish, mix ½ cup olive oil, juice of 2 medium lemons, chopped garlic from the mixing bowl, 1 tablespoon chopped fresh rosemary, 1 tablespoon chopped fresh thyme, and 1 tablespoon chopped fresh oregano. Stir well to combine.

Marinate Chicken

Place 1 (4 pound) chicken, cut into pieces, in the marinade. Cover the dish and marinate in the refrigerator for 2 to 3 hours.

Grill Chicken

Preheat an outdoor grill for high heat and lightly oil the grate. Place chicken on the grill, and discard the marinade. Cook until chicken is no longer pink at the bone and the juices run clear, about 15 minutes per side (smaller pieces will not take as long). An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
