Description

This chicken with chestnuts is a rustic and comforting dish, perfect for autumn or winter evenings. The combination of tender chicken with the sweetness of chestnuts and the scent of sherry creates a harmony of flavors that will delight your palate. I often prepare it when I have guests for dinner, because it is easy to make and always makes a great impression! The dried chestnuts, rehydrated and slowly cooked, melt in your mouth, while the chicken is flavored with ginger and soy sauce. A real comfort food!

Ingredients (7 ingredients)

  • 500 g dried chestnuts
  • 1.5 kg chicken
  • 2 tbsp oil
  • 3 piece leeks (cut into 4-5 pieces)
  • 3 tbsp dry sherry
  • 6 tbsp soy sauce
  • 3 piece ginger

Preparation (5 steps)

Rehydration of the chestnuts

Put 500 g of dried chestnuts in a large bowl and cover with cold water. Soak for at least 2 hours, or preferably overnight.

Cooking the chestnuts

150 min/212°F/Speed 1 100

Drain the rehydrated chestnuts and put them in the Mixtopf with 1250 ml of water. Cook for 150 Min./100°C/Stufe 1.

Preparation of the chicken

In a large skillet, heat 2 tablespoons of oil over medium heat. Brown a chicken of about 1.5 kg on all sides until golden brown.

Initial cooking of the chicken

60 min/212°F/Speed 1 100

Transfer the browned chicken to the Mixtopf. Add 500 ml of water, 3 leeks cut into 4-5 pieces, 3 tablespoons of dry sherry and 3 pieces of ginger. Cook for 60 Min./100°C/Stufe 1.

Addition of the chestnuts

Thermomix® Setting
2 min/212°F/Speed 1 100

Add the cooked chestnuts with their cooking water and 6 tablespoons of soy sauce to the Mixtopf. Cook for 2 Min./100°C/Stufe 1.
