Description

This rustic chicken with mixed vegetables is a heartwarming dish, perfect for autumn evenings. The meat, tender and flavorful, perfectly matches the seasonal vegetables, creating a combination of flavors that recalls Italian culinary traditions. Preparing this dish with the Thermomix® is child's play and the result is always guaranteed. I love it because it is a complete and tasty single dish, ideal for a family lunch or a dinner with friends. A tip? Accompany it with a good glass of white wine!

Ingredients (11 ingredients)

  • 1 piece chicken
  • fine salt
  • pepper
  • 1 clove garlic
  • rosemary
  • 2 piece carrots
  • 2 piece onions
  • 2 coste celery
  • 2 piece potatoes
  • extra virgin olive oil
  • 100 ml white wine

Preparation (5 steps)

Chicken preparation

Season the chicken with fine salt and pepper to taste, sprinkling them on top and spreading them evenly. Insert a clove of garlic and a few sprigs of rosemary inside the chicken. Set aside and let it flavor.

Vegetable preparation

Cut the carrots, celery, onions and potatoes into small pieces. In a bowl, season the vegetables with fine salt, pepper to taste and extra virgin olive oil to taste. Mix well.

Oven cooking

Pour a little extra virgin olive oil to taste on the bottom of a pan and place the chicken inside, with the vegetables around it. Add more extra virgin olive oil to taste and another sprig of rosemary. Bake and cook in a ventilated oven at 180°C for about 90 minutes, remembering, halfway through cooking, to pour 100 ml of white wine over the chicken.

Sauce preparation

30 sec/Speed 8

Once the chicken is cooked, remove from the oven and place on a serving dish accompanied by half of the vegetables as a side dish. Pour the other half of the vegetables, together with the cooking liquid, into the Thermomix bowl. Blend everything for 30 seconds/Stufe 8 until a thick and homogeneous sauce is obtained.

Serve

Pour the sauce into a small bowl and bring it to the table together with the chicken.
