Description

This honey-mustard glazed gammon is a delightful centerpiece for any festive occasion. The combination of sweet honey and tangy mustard creates a beautiful glaze that caramelizes perfectly in the air fryer. I've been making this for Christmas dinner for years, and it's always a hit! The gammon is incredibly moist and flavorful, and the pineapple salsa adds a refreshing tropical twist. It's surprisingly easy to make, and the air fryer makes it even quicker. Perfect for a hearty winter meal or a special celebration.

  • 1 piece unsmoked gammon joint
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • sliced bread
  • butter
  • pineapple salsa

Prepare the Gammon Glaze

Thermomix® Setting

In the Thermomix bowl, combine 2 tbsp Dijon mustard and 2 tbsp honey. Season with salt and freshly ground black pepper. Mix for 10 Sec./Stufe 3. Brush this mixture all over the unsmoked gammon joint, reserving any leftover glaze. Wrap the gammon in foil.

Air Fry the Gammon

Preheat the air fryer to 160°C. Place the foil-wrapped gammon in the air fryer and cook for 1 hour, brushing with more glaze every 20 minutes if possible. Use a digital thermometer to check the internal temperature – it should read 70°C. Remove from the air fryer and leave to rest for 10-15 minutes before carving.

Serve

Carve a few slices of gammon. Butter the sliced bread, then top one slice with 1-2 tbsp pineapple salsa, layer on the slices of gammon and top with another slice of bread. Serve immediately.
