Description

This Provençal pizza is a feast for the senses! With sun-ripened tomatoes, aromatic olives and salty anchovies, it takes you directly to the French Mediterranean coast. I especially like to make it in the summer when the tomatoes develop their full flavor. Preparation with the Thermomix® is very easy and saves time. The dough becomes wonderfully smooth and the topping is prepared in no time at all. An absolute favorite recipe that is well received on every occasion. Whether as a main course or as a snack in between - this pizza is always a good choice. If you like it a little spicier, you can add a pinch of chili. Bon appétit!

Ingredients (13 ingredients)

  • 1 c. à c. Salt or fine salt
  • 1 petit verre Water
  • 125 g Butter
  • 250 g Flour
  • 2 pièces Tomatoes
  • 100 g Niçoise olives
  • 2 c. à c. Herbs of Provence
  • 12 filets Anchovies
  • Salt or fine salt
  • Freshly ground pepper
  • 3 c. à s. Olive oil
  • 2 c. à s. Water
  • 250 g Onions

Preparation (7 steps)

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 1 tsp salt, 1 small glass water, 125 g butter and 250 g flour into the mixing bowl and process into a dough for 2 min./kneading stage.

Let the dough rest

Remove the dough from the mixing bowl, form into a ball and let it rest covered for approx. 30 minutes.

Prepare onions

Thermomix® Setting
3 sec/Speed 5

Peel 250 g onions, halve and place in the mixing bowl. Chop 3 sec./speed 5. Push down with the spatula.

Sauté onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 3 tbsp olive oil to the onions and sauté for 3 min./120°C/speed 1.

Add tomatoes

Thermomix® Setting
5 min/212°F/Speed 1 100

Cut 2 tomatoes into pieces and add to the onions in the mixing bowl together with 2 tbsp water, salt and pepper. Simmer for 5 min./100°C/speed 1.

Prepare topping

Roll out the dough on a floured work surface and place on a baking sheet. Spread the tomato-onion mixture evenly on the dough. Distribute 100 g olives, 12 anchovy fillets and 2 tsp herbs of Provence on top.

Bake pizza

Bake the pizza in a preheated oven at 200°C top/bottom heat for approx. 20-25 minutes until the dough is golden brown.
