Description

This Provençal chicken is an absolute delight! The combination of tender chicken, aromatic herbs and sun-ripened vegetables is reminiscent of a vacation in Provence. I especially like to make it in the summer when the vegetables are fresh from the market. Preparation in the Thermomix® is super easy and quick, so you have more time to enjoy the summer evening. If you like, you can serve a little sour cream or yogurt dip with it. A glass of dry white wine rounds off the dish perfectly.

Ingredients (16 ingredients)

  • 2 piece Chicken breast with skin and bone
  • 2 piece Onion, medium-sized, quartered
  • 2 piece Potato, medium-sized, quartered
  • 1 piece Bell pepper, red, cut into bite-sized pieces
  • 1 piece Bell pepper, yellow, cut into bite-sized pieces
  • 1 piece Zucchini, small
  • 1 Knolle Garlic, divided into cloves
  • 3 tbsp Olive oil
  • to taste Herbs of Provence
  • to taste Thyme, fresh
  • 1 Glas Wine, white, dry
  • to taste Rosemary
  • to taste Salt
  • to taste Pepper
  • Lemon
  • Olive, black

Preparation (6 steps)

Chop onions and garlic

Cut the onions into coarse pieces and put them in the mixing bowl together with the garlic cloves. Chop for 3 sec./level 5. Scrape down from the edge with the spatula.

Sauté vegetables

Add 3 tbsp olive oil to the mixing bowl and sauté for 3 min./120°C/level 1.

Add vegetables

Add the quartered potatoes, the bite-sized red and yellow peppers and the zucchini in pieces to the mixing bowl. Season with salt, pepper and herbs of Provence. Sauté for 5 min./120°C/reverse rotation level 1.

Sear chicken

Remove the vegetables from the mixing bowl and set aside. Salt the chicken breasts and sear sharply on the skin side in a large, heavy pan with some olive oil, then turn and sear briefly. Remove the chicken from the pan and set aside.

Braising

Thermomix® Setting
30 min/212°F/Linkslauf Speed 1 100 Reverse

Put the vegetables back into the mixing bowl. Place the seared chicken on top. Deglaze with white wine. Braise for 30 min./100°C/reverse rotation level 1.

Season and Serve

Season the dish and, if necessary, add salt, pepper and herbs of Provence. Garnish with lemon slices and black olives and serve.
