Description

This creamy mashed potato with mushrooms and egg is a comforting and delicious dish, perfect for a quick dinner or as a special side dish. The combination of the smoothness of the puree, the earthy flavor of the mushrooms and the richness of the egg make it a unique culinary experience. I often prepare it in autumn, when mushrooms are at their best. It is very easy to do with the Thermomix®, and the result is always a smooth and homogeneous puree. Go ahead and try it, you'll love it! You can add a little grated cheese to gratin if you want to give it an extra touch.

Ingredients (9 ingredients)

  • 400 gramos Potato
  • 100 mililitros Evaporated milk
  • 25 gramos Butter
  • 400 gramos Mushrooms
  • 4 piece Eggs
  • 2 ramas Parsley
  • 1 chorro Olive oil
  • 1 pinch Salt
  • 1 pinch Pepper

Preparation (6 steps)

Cooking the potatoes

Thermomix® Setting
40 min/212°F/Speed 1 100

Wash the potatoes and place them in the Thermomix bowl. Add water to cover the potatoes and a pinch of salt. Program 40 Min./100°C/Stufe 1.

Preparation of the puree

Thermomix® Setting
30 sec/Speed 4

Once the potatoes are cooked, drain and peel them. Place them back in the Thermomix bowl. Add the evaporated milk, butter, salt and pepper. Program 30 Sek./Stufe 4 to obtain a homogeneous puree.

Preparation of the parsley oil

Thermomix® Setting
15 sec/Speed 7

Wash and dry the parsley. Place the chopped parsley in the Thermomix bowl together with the olive oil. Program 15 Sek./Stufe 7 to obtain a homogeneous mixture.

Preparation of the mushrooms

Clean the mushrooms, remove the soil, wash them, dry them and cut them into thin slices. Heat a pan with a few drops of oil and sauté the mushrooms for approximately 8 minutes. Season with salt and pepper to taste.

Preparation of the fried eggs

Heat a little oil in a pan. Fry the eggs one by one until the white is set. Season with salt and pepper to taste.

Assembly of the dish

Divide the mashed potatoes on plates. Add the sautéed mushrooms and drizzle with the oil and parsley mixture. Place a fried egg on top of each serving. Garnish with a washed and dried parsley leaf.
