Ingredients (14 ingredients)

  • 35 g Oil
  • 300 g Red onions, in wedges
  • 200 g White onions, halved
  • 650 g Water
  • 1.5 TL Spice paste for meat broth, homemade, or 1/2 cube of meat broth (for every 0.5 l)
  • 1 TL Salt
  • 0.25 TL Pepper
  • 0.75 TL Sweet paprika
  • 550 g Potatoes, waxy, diced (approx. 2 cm)
  • 300 g Kabanos, sliced (approx. 1 cm)
  • 150 g Red bell pepper, diced (1.5 cm)
  • 1 TL Marjoram, dried
  • 10 g Chives, finely chopped
  • 200 g Crème fraîche for serving

Preparation (6 steps)

Sauté red onions

Add 20 g oil and red onion wedges to the mixing bowl and sauté for 3 min./Browning/speed 1. Then transfer.

Chop white onions

Put the halved white onions into the mixing bowl and chop for 3 sec./speed 5. Scrape down the sides with the spatula.

Sauté white onions

Add 15 g oil and simmer for 5 min./120°C/speed 1.

Cook the stew

Add 650 g water, 1 1/2 rounded tsp spice paste for meat broth, 1 tsp salt, 1/4 tsp pepper, 3/4 tsp sweet paprika and 550 g potatoes, waxy, diced (approx. 2 cm) and cook for 18 min./100°C/speed 1.

Finish the stew

Add 300 g kabanos in slices (approx. 1 cm), sautéed red onions, 150 g red bell pepper in cubes (1.5 cm) and 1 rounded tsp marjoram, dried, stir with the spatula and cook for 6 min./100°C/speed 1.

Serve

Divide the stew on plates, sprinkle with 10 g chives in fine rolls and serve with 1 tbsp crème fraîche each.
