Description

This watermelon and tomato gazpacho is an explosion of summer flavor that I prepare every year. The sweetness of the watermelon is perfectly balanced with the acidity of the tomato, creating a refreshing and light cold soup. It is ideal as a starter on a hot day or for a light dinner. It is also super easy to make with the Thermomix® and can be ready in less than half an hour (plus cooling time). A vegetarian and vegan dish that everyone will love! If you like a more intense touch, you can add a little more vinegar or even a little chili. Dare to try it!

Ingredients (11 ingredients)

  • 500 gramos watermelon
  • 250 gramos tomatoes
  • 1 trozo onion
  • 1 trozo green pepper
  • 1 clove garlic
  • 1 trozo cucumber
  • 1 container water
  • 1 chorro olive oil
  • 1 chorro white vinegar
  • 1 pinch salt
  • 1 pinch pepper

Preparation of the watermelon and cucumber

Peel the watermelon and cucumber, remove the seeds if necessary, and cut into large pieces. Introduce 500 g of watermelon in pieces and the chopped cucumber into the Thermomix glass.

Preparation of the vegetables

Peel and chop the onion. Wash, remove the seeds and chop the green pepper. Peel the garlic clove. Add the chopped onion, the chopped green pepper and the garlic clove to the Thermomix glass.

Preparation of the tomatoes

Peel the tomatoes (250 g) and remove the seeds if desired. Cut into pieces and add to the Thermomix glass.

Crush the ingredients

1 min/Speed 10

Add 1 glass of water, 1 splash of olive oil, 1 splash of white vinegar, 1 pinch of salt and 1 pinch of pepper to the glass. Crush all the ingredients until you get a fine cream.

Adjust the consistency

If the gazpacho is very thick, add more water and mix for 10 seconds at speed 4.

Correct the flavor

5 Seg./Speed 3

Taste the gazpacho and add more salt, olive oil or vinegar if necessary. Mix for 5 seconds at speed 3 to integrate the ingredients.

Cool and serve

Pour the gazpacho into a container and refrigerate for at least 2 hours before serving. Serve cold with a splash of olive oil and pepper.
