Description

This hearty root vegetable stew is real soul food for cold days! I especially like to make it in autumn and winter, when swedes and carrots are in season. The combination of sweet swede, crunchy carrots and hearty potatoes is simply unbeatable. The addition of Viennese sausages turns the stew into a complete meal. Some of the potatoes are grated at the end, which gives the stew a nice binding. Sprinkled with fresh parsley, it tastes simply delicious! Can be prepared very well and is ideal for the whole family.

Ingredients (10 ingredients)

  • 750 g Swede
  • 600 g Potatoes
  • 375 g Carrots
  • 40 g Onion
  • 20 g Butter or margarine
  • 1 l Vegetable broth
  • 200 g Viennese sausages
  • 1 bunch Parsley
  • Salt
  • Coarse pepper

Preparation (6 steps)

Prepare swede, potatoes and carrots

Halve the swede, cut into slices, peel, wash and dice. Peel and wash the potatoes and carrots. Set aside 3 potatoes (approx. 150 g). Cut the remaining carrots and potatoes into pieces. Peel and finely dice the onion.

Sauté onions

Put 20 g of butter or margarine into the mixing bowl and sauté for 3 min./120°C/speed 1.

Add vegetables and broth

Add the diced swede, potato and carrot, as well as the diced onion, to the mixing bowl. Pour in 1 l of vegetable broth and cook for 25 min./100°C/speed 1.

Add sausages

Cut 2 Viennese sausages into slices and add them to the vegetables in the mixing bowl through the lid opening 5 minutes before the end of the cooking time (i.e. after 20 minutes). Cook for a further 5 min./100°C/speed 1.

Refine stew

Grate the 150 g of potatoes set aside and add to the mixing bowl. Stir in for 2 min./100°C/reverse speed 1.

Season and serve

Season the stew with salt and coarse pepper. Wash 1 bunch of parsley, chop finely and sprinkle over the stew before serving.
