Description

This hearty pointed cabbage and potato stew with ground meat is a warming dish for the cold season. It's mainly prepared in the Thermomix® and is ideal as a satisfying main course. Served with fresh sour cream and parsley, it offers a hearty taste experience. The preparation time is about 60 minutes and yields 4 servings.

Ingredients (15 ingredients)

  • 1 Stück Onion
  • 2 Zehen Garlic
  • 700 g Pointed cabbage
  • 600 g Potatoes - predominantly firm cooking
  • 2 EL Olive oil
  • 400 g Ground meat - mixed
  • 2 EL Tomato paste
  • 1 l Vegetable broth
  • 1 TL Sweet paprika powder
  • 1 TL Hot paprika powder
  • 0.5 TL Cumin
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • Sour cream - for serving
  • Parsley

Preparation (6 steps)

Chop onion and garlic

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 7

Place 1 onion in the mixing bowl and chop for 3 sec./speed 5. Add 2 cloves of garlic and chop for 3 sec./speed 7. Use the spatula to scrape everything down from the side.

Prepare pointed cabbage and potatoes

Halve 700 g of pointed cabbage lengthwise, remove the stalk and cut the cabbage into strips. Peel 600 g of potatoes and cut into cubes. Set both aside.

Brown ground meat

Heat 2 tbsp of olive oil in a large pan and brown 400 g of ground meat (mixed) vigorously. Add the chopped onions and garlic and sauté briefly. Stir in 2 tbsp of tomato paste and sauté briefly. Set the browned ground meat with onions, garlic and tomato paste aside.

Cook stew

Place the browned ground meat with onions, garlic and tomato paste in the mixing bowl. Add the chopped potatoes and pointed cabbage. Pour 1 l of vegetable broth over it. Add 1 tsp of sweet paprika powder, 1 tsp of hot paprika powder and 1/2 tsp of cumin, salt and pepper.

Cook stew

Thermomix® Setting
35 min/212°F/Linkslauf Speed 1 100 Reverse

Close the mixing bowl and simmer for 35 min./100°C/reverse blade speed 1 until the potatoes are soft. After half the time, stir through the lid opening with the spatula.

Season and Serve

Season the layered cabbage with salt and pepper. Serve with sour cream and parsley.
