Description

This hearty Rassolnik, a sour soup with pickles, carrots, onions, and pork neck, is prepared in the Thermomix®. The recipe is ideal for the cold season and can be easily cooked in advance. In just 45 minutes, a cheap and filling main course for 4 servings is created. Especially suitable for lovers of hearty soups and stews.

Ingredients (16 ingredients)

  • 300 g Pickles
  • 1 Stück Carrot (coarsely chopped)
  • 1 Stück Onion
  • 1 Stück Garlic clove
  • 20 g Butter
  • 1.5 EL Vegetable broth
  • 300 g Potatoes (bite-sized pieces)
  • 300 g Pork neck (bite-sized pieces)
  • 90 g Pearl barley medium
  • 1100 g Water
  • 2 Stück Bay leaves
  • 100 g Pickle brine (from the jar)
  • 1 EL Parsley
  • 1 EL Dill
  • 1 TL Salt, season to taste if necessary
  • 0.5 TL Pepper, season to taste if necessary

Preparation (7 steps)

Chop pickles

Place pickles in the mixing bowl and chop for 3 sec./speed 5. Transfer to a bowl.

Chop vegetables

Place carrot, onion and garlic clove in the mixing bowl and chop for 4 sec./speed 5.

Sauté vegetables

Add butter and sauté for 5 min./120°C/speed 1.

Cook soup

Add vegetable broth, potatoes, pork neck (sear in a separate pan), pearl barley, water and bay leaves, mix everything with the spatula and cook for 25 min./100°C/Reverse/speed 1.

After 15 minutes, set the Thermomix to 98°C.

Add pickles

Add pickles and pickle brine (from the jar) and cook for 10 min./98°C/Reverse/speed 1.
