Description

These sweet ravioli are a real explosion of flavors in the mouth! The dough, delicately scented, contains a smooth and vanilla custard, contrasting perfectly with the acidity of the passion fruit. I prepare this dessert for special occasions, because it always impresses my guests. The preparation takes a little time, but the result is really worth it. Serve these ravioli warm, topped with passion fruit coulis, for an unforgettable dessert. A delight for the taste buds, perfect for a Sunday brunch or a festive dinner!

Ingredients (12 ingredients)

  • 200 g Flour
  • 40 g Icing sugar
  • 2 piece Whole egg(s)
  • 4 cl Water
  • 4 cl Olive oil
  • 1 pinch Salt
  • 20 cl Custard
  • 2 clove Vanilla
  • 1 piece Egg white(s)
  • 40 g Granulated sugar
  • 2 piece Ripe passion fruit
  • 5 g Molasses

Preparation (8 steps)

Preparation of the ravioli dough

Thermomix® Setting
2 min/Kneading speed

In the Thermomix bowl, pour 200 g of flour, 40 g of icing sugar, 2 whole eggs, 4 cl of water, 4 cl of olive oil and 1 pinch of salt. Mix and knead for 2 Min./Knead setting. Transfer the dough to a lightly floured work surface, form a ball and wrap in cling film. Refrigerate for 1 hour.

Preparation of vanilla custard

In a container, mix 20 cl of custard with the seeds of 2 vanilla beans split in half. Mix well and let cool completely in the refrigerator.

Whipping the egg whites

Thermomix® Setting
3 min/Speed 3.5

Insert the whisk into the Thermomix. Add 1 egg white and 40 g of granulated sugar. Whisk for 3 Min./Level 3.5 until stiff peaks form.

Incorporating the egg whites into the custard

Remove the custard from the refrigerator and soften it with an electric mixer. Gently incorporate the egg whites into the custard using a spatula, lifting the mixture.

Preparation of passion fruit coulis

Thermomix® Setting
5 min/212°F/Speed 1 100

Open 2 ripe passion fruits and empty the pulp into a saucepan. Add 5 g of molasses and reduce everything for 5 Min./100°C/Level 1.

Assembly of the ravioli

On a generously floured work surface and using a rolling pin, roll out the ravioli dough to 5 mm thick. Place knobs of filling at regular intervals, then cover with a second layer of dough. Cut out square ravioli measuring 5 cm on each side.

Cooking the ravioli

Boil a large amount of lightly sweetened water in a saucepan. Cook the ravioli for about 2 minutes. The ravioli must remain “Al Dente”.

Plating

Serve 4 ravioli per person with a little passion fruit coulis.
