Description

These apricot oat slices are a delightful treat, perfect for a simple dessert or a satisfying snack. I've been making these for years, and they always disappear quickly! The combination of the buttery oat base, sweet apricot jam, and a hint of spice is simply irresistible. They're easy to make and require minimal effort, making them ideal for a quick baking project. The recipe is perfect for using up leftover apricot jam. These slices are best enjoyed slightly chilled, allowing the flavors to meld together beautifully. They are also great for picnics or lunchboxes.

Ingredients (8 ingredients)

  • 250 g salted butter
  • 220 g plain flour
  • 150 g light brown soft sugar
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground cardamom
  • 150 g porridge oats
  • 150 g apricot jam

Preparation (6 steps)

Prepare the tin

Butter a 20cm square cake tin and line with baking parchment. Set aside.

Combine ingredients

Thermomix® Setting
20 sec/Speed 4

Add 250g salted butter, 220g plain flour, 150g light brown soft sugar, 1 tsp ground cinnamon, ½ tsp ground nutmeg, and ¼ tsp ground cardamom to the mixing bowl. Mix for 20 Sec./Stufe 4 until combined and clumping together.

Add oats

Thermomix® Setting
10 sec/Speed 3

Add 150g porridge oats and mix for 10 Sec./Stufe 3 until incorporated.

Press into tin

Tip two-thirds of the mixture into the prepared tin and press it into the base in an even layer using your hands.

Add jam and crumble

Spread 150g apricot jam over the oat layer, then sprinkle over the remaining oat mixture, breaking it up into rough clumps as you do. Chill for 20-30 mins to firm up.

Bake

Heat the oven to 200C/180C fan/gas 6. Bake the bars for 40-45 mins until golden. Leave to cool completely in the tin before turning out and cutting into 10-12 bars.
