Ingredients (9 ingredients)

  • 150 g Wheat Flour T550
  • 150 g Water
  • 0.1 Stück Fresh Yeast
  • 350 g Wheat Flour T550
  • 100 g Yogurt
  • 50 g Water
  • 1 TL Baking Malt or Syrup
  • 6 g Fresh Yeast
  • 9 g Salt

Preparation (6 steps)

Prepare the preferment

Thermomix® Setting

Add 150g wheat flour T550 and 150g water to the mixing bowl. Add a rice-grain-sized piece of fresh yeast.

Let the preferment rise

Transfer the preferment to a bowl, cover and let stand at room temperature for 10-12 hours.

Prepare the main dough

The next morning, add 350g wheat flour T550, 100g yogurt, approx. 50g water, 1 tsp baking malt or syrup, the preferment, approx. 6g fresh yeast and finally approx. 9g salt to the mixing bowl.

Let the dough rise

Transfer the dough to a bowl and let rise for approx. 30 minutes. Then stretch and fold the dough... repeat 1-2 more times. Let rise for a total of perhaps 2 hours.

Shape the dough

Divide the dough into 9 equal pieces. Round each piece and let it relax a little. Now, use the heel of your hand to flatten the dough pieces in the middle and roll the pieces lengthwise. Place the pieces with the seam facing down onto a floured cloth and let them rise covered for half an hour to 1 hour.

Bake the bread rolls

For baking, turn the pieces over again, with the seam facing up. Preheat the oven to 230°C and bake the bread rolls with plenty of steam for approx. 10 minutes, then release the steam and finish baking the bread rolls until golden brown. If necessary, spray the finished bread rolls with water.
