Description

This hearty hunter-style beef roast, prepared in the Thermomix®, is a savory main course with beef, mushrooms, bacon, and onions. Preparation takes about 120 minutes, with an active working time of 30 minutes. The recipe is ideal for 6 servings and is especially well-suited as a festive family meal or for lovers of hearty autumn/fall cuisine. With the Thermomix®, the roast is particularly tender and flavorful.

Ingredients (11 ingredients)

  • 1 kg Beef roast, cut as a flat slice
  • 2 Stück Onions, chopped
  • 500 g Mushrooms, sliced
  • 150 g Black Forest bacon, diced
  • 1 Bund Parsley, chopped
  • 1 Stück Large carrot, diced
  • 1 Stück Garlic clove, pressed
  • 0.125 l White wine
  • 2 EL Sour cream, stirred until smooth
  • Salt
  • Pepper

Preparation (10 steps)

Prepare the meat

Season the inside of the meat with salt and pepper.

Render bacon

Render the bacon in a separate hot pan.

Sauté onions and mushrooms

Add the onions, half of the mushrooms, and the parsley to the bacon in the pan and sauté briefly.

Let the mixture sit

Put the lid on and let it sit for about 10 minutes without adding energy.

Fill and roll the roulade

Spread this mixture on the meat, roll everything into a large roulade, and tie it together.

Brown the roulade

Brown the roulade well on all sides in a separate pan.

Prepare vegetables

Put the remaining mushrooms, carrots, and garlic in the mixing bowl and chop for 3 sec/speed 5.

Braise the roulade

Put the browned roulade in the mixing bowl, deglaze with wine, put the lid on, and cook on a low energy level for about 1 1/2 hours/100°C/speed 1.

Prepare the sauce

Remove the meat and keep warm. Stir the sour cream into the sauce and season with salt and pepper. 5 sec/speed 3.

Arrange

Cut the roast, arrange it on a plate. Place some of the vegetable sauce around the roast and serve the rest separately.
