Description

This grape mousse is a light and refreshing dessert, perfect for hot summer days. The recipe is very simple and quick to prepare, ideal for when you have little time but want to surprise your guests with something delicious. The combination of fresh grapes, natural yogurt and a touch of orange gives it a unique and balanced flavor. It is also a healthy and gluten-free option, suitable for almost everyone. I usually add a little sweetener to enhance the sweetness of the grapes, but you can use sugar if you prefer. Go ahead and try it, you will love it!

Ingredients (7 ingredients)

  • 150 g peeled and seedless grapes
  • 0.5 piece small orange juice
  • 5 tsp powdered gelatin
  • 1 piece natural yogurt (skimmed)
  • 1 pinch sweetener
  • 1 tbsp liquid caramel
  • 1 piece candied cherry (optional)

Prepare the gelatin

Thermomix® Setting

Squeeze the juice of half a small orange. Pour the juice into the glass and program 3 Min./80°C/Speed 1. Add 5 tsp of powdered gelatin and mix 10 Seg./Speed 3 until well dissolved.

Crush the grapes with yogurt

Add 150 g of peeled and seedless grapes and 1 natural yogurt (skimmed) to the glass. Crush for 20 Seg./Speed 7 until a homogeneous mixture is obtained.

Integrate the mixture with the gelatin

10 Seg./Velocidad 3

Pour the grape and yogurt mixture into the glass with the dissolved gelatin. Mix gently for 10 Seg./Speed 3.

Add sweetener

Thermomix® Setting

Taste the mixture and add sweetener to taste. Mix for 5 Seg./Speed 3 to integrate the sweetener.

Pour into the mold

In a mold, put 1 tbsp of liquid caramel and pour the preparation into it. Spread evenly.

Refrigerate

Put in the refrigerator and do not unmold until at least 6 hours (360 minutes) have passed. Unmold and decorate to taste with candied cherry (optional).

My grandmother always prepared simple but delicious desserts with the fruits from her orchard. Although she did not have Thermomix®, her spirit of taking advantage of fresh seasonal ingredients inspired me to create this Refreshing Grapes Mousse. I remember that in summer, grapes were abundant and we always looked for ways to enjoy them beyond eating them directly from the bunch. Grapes, the star of this dessert, provide a natural sweetness and a juicy texture. It is important to peel them and remove the seeds to obtain a smooth and pleasant mousse on the palate. The juice of small orange enhances the flavor of the grapes and adds a citrus touch that balances the sweetness. Natural yogurt, preferably skimmed, gives the mousse creaminess without adding too many calories. Powdered gelatin is essential to give it consistency and allow the mousse to solidify in the refrigerator. Sweetener is optional, but I usually add a pinch to intensify the sweetness of the grapes, especially if they are not very ripe. To prepare this mousse in Thermomix®, it is crucial to dissolve the gelatin well in the hot orange juice. Make sure there are no lumps to avoid an irregular texture in the final mousse. When crushing the grapes with the yogurt, program the Thermomix® at speed 7 for 20 seconds to obtain a homogeneous mixture without pieces. When integrating the grape and yogurt mixture with the dissolved gelatin, do it gently at speed 3 for 10 seconds to prevent the gelatin from curdling. If you are looking for a vegetarian version, you can substitute traditional gelatin with agar-agar, a seaweed with gelling properties. For a vegan version, use coconut or soy yogurt and agar-agar instead of gelatin. You can experiment with different spices to give a special touch to the mousse. A pinch of cinnamon or cardamom can enhance the flavor of the grapes. To serve, unmold the mousse carefully and decorate it with a candied cherry, some fresh mint leaves or some orange slices. You can accompany it with some whole wheat cookies or wafers to add a crunchy touch. This mousse is perfect as a light dessert after a heavy meal or as a refreshing snack on a hot day. The Refreshing Grapes Mousse keeps well in the refrigerator for 2-3 days. You can prepare it in advance and have it ready for when you need it. If you want to speed up the cooling process, you can put it in the freezer for about 30 minutes, but be careful not to freeze it completely.
