Description

This quinoa salad is an absolute blast! The combination of quinoa, fresh herbs, crunchy cucumber and creamy feta is simply unbeatable. The recipe is super easy and quick to prepare, perfect for a light lunch or as a side dish for grilling. I love how the mint and lemon give the salad a refreshing touch. And the best part: it's also really healthy and filling! Feel free to vary with other herbs or add olives. A real all-rounder that is always well received!

Ingredients (11 ingredients)

  • 2 Tasse/n Quinoa mixed
  • 1 Handvoll Mint
  • 1 Handvoll Parsley, chopped
  • 400 g Chickpeas
  • 1 piece Onion(s), red
  • 150 g Feta cheese or Shepherd's cheese
  • 1 piece Lemon(s)
  • 1 piece Cucumber(s), large
  • Olive oil
  • Salt
  • Pepper

Preparation (5 steps)

Cook quinoa

Thermomix® Setting
15 min/212°F/Speed 1 100

Place 2 cups of quinoa mixed in a sieve and wash under running water. Add the washed quinoa and 4 cups of water to the mixing bowl and simmer for 15 min./100°C/speed 1 without a measuring cup. Then transfer to a bowl and let cool.

Prepare chickpeas

Place 1 can of chickpeas (approx. 400 g) in a sieve and rinse under running water. Drain well and set aside.

Chop onion

Thermomix® Setting
3 sec/Speed 5

Peel, quarter and place 1 small red onion in the mixing bowl. Chop for 3 sec./speed 5. Scrape down from the edge with the spatula.

Prepare salad

Place the cooled quinoa, drained chickpeas, 1 handful of chopped mint, 1 handful of chopped parsley, 1 finely chopped large cucumber and the chopped red onion in a large bowl. Squeeze the juice of 1 lemon over it, add olive oil to taste and season with salt and pepper. Mix everything well.

Add feta and serve

Crumble 150 g of feta cheese or shepherd's cheese over the salad. Mix everything carefully and serve the salad lukewarm.
