Description

This refried bean cake is a traditional recipe that I have adapted to make it even easier with the Thermomix®. The combination of creamy beans, the sweetness of the fried ripe plantain and the crunchiness of the pork rind creates an explosion of flavors and textures. It is a perfect dish to share in a family meal or a special celebration. It is prepared in a short time and is ideal for taking advantage of cooked beans that you have left over. Ingredients (11 ingredients)

  • 3 tazas cooked beans with salt and liquefied
  • 3 cucharadas seasoning sauce
  • tomatoes
  • onion
  • garlic
  • coriander
  • 0.5 libra fried pork rinds and chopped small
  • 1 piece ripe plantain fried and chopped in squares
  • to taste salt
  • to taste pepper
  • to taste cumin

Preparation of the ingredients

Finely chop the tomatoes, onion, garlic and coriander. Set aside. Fry the ripe plantain and chop it into squares. Chop the fried pork rinds into small pieces. Set aside.

In the Thermomix bowl, add the cooked beans with salt and liquefied, the seasoning sauce, the chopped tomatoes, the chopped onion, the chopped garlic, the chopped coriander, the fried and chopped pork rinds, the ripe plantain fried and chopped, salt, pepper and cumin to taste. Mix 20 sec./Speed 4.

Bake the cake

Pour the mixture into a baking dish previously greased with butter. Bake in a preheated oven at 175°C (350 degrees Fahrenheit) for 40 minutes, or until golden brown and firm.
